Roasted Chipotle Cauliflower Tacos

These Roasted Chipotle Cauliflower Tacos will be your new favorite vegan recipe! They’re perfect for a meatless Monday or simple dinner for any day of the week. Flavorful roasted cauliflower, coated in simple spices, black beans, crisp lettuce, and avocado all come together in the perfect taco with a creamy spicy lime tahini sauce. The Best Easy Roasted Cauliflower Tacos

Cauliflower tacos! Before you immediately exit stage left at the idea of cauliflower replacing meat in a taco recipe, here me out. I was once where you might be right now. Refusing to get on the whole ‘cauliflower as a meat substitute’ because I just could not, ya know?

But, I am happy to announce that I was wrong and that these roasted cauliflower tacos are absolutely delicious! Not only are these chipotle cauliflower tacos hearty and filling, they’re also incredibly easy to make and a quick dinner option. I know you’ll love them!

Chipotle Cauliflower Taco Ingredients

Cauliflower Florets: for the best results I recommend using cutting your cauliflower into larger florets instead of smaller pieces.

Spices: the cauliflower is packed with flavor thanks to a blend of tasty herbs and spices.

Black Beans: to make sure these tacos are nice and hearty, I like to add black beans to the mix. This is optional, of course, but I think it makes the tacos even better.

Spicy Lime Tahini: an optional but very delicious sauce to slather on your tacos.

Corn Tortillas: I love the flavor of corn tortillas in this recipe. Of course, feel free to use your favorite tortillas but corn tortillas are usually naturally gluten free and have a delicious texture and flavor in this dish.

How to Make Cauliflower Tacos

(Full ingredients and instructions are included in the recipe card, below).

Step One: First, start by preheating your oven to 425 degrees. Preheat oven to 425 degrees.

Step Two: Next, add the cauliflower florets, avocado oil, spices, and lime juice to a large mixing bowl. Stir until the cauliflower is well coated in the oil and the spices.

Step Three: Transfer the cauliflower florets to a sheet pan and spread into an even layer. You don’t want any of the cauliflower florets to be stacked on top of each other.

Step Four: Roast the cauliflower for fifteen to seventeen minutes until the florets are tender and slightly crispy. The should still have a little bit of “bite” to them. While the cauliflower is roasting you can whip up a batch of your spicy lime tahini.

Step Five: Remove the cauliflower from the oven and let it cool slightly while you gather the rest of your taco ingredients.

Step Six: Now, it’s time to assemble your tacos! Start with warmed corn tortillas then add shredded lettuce, black beans, the roasted cauliflower, spicy lime tahini, pico de gallo, and avocado. Serve immediately and enjoy!

The Most Delicious Spicy Lime Tahini Sauce

If you want to take these tacos to the next level you have to make the delicious spicy lime tahini sauce. While the tacos are great without it, I really think the sauce takes things to the next level. I’ve included the link to the tahini sauce recipe below but here is a run down of what you will need.

  • lime juice
  • green onions
  • cilantro
  • fresh garlic
  • olive oil

Let’s Talk About Toppings

When it comes down to it, taco toppings are very personal decision but I have a few suggestions that I think work really well with these roasted cauliflower tacos. Oh, and if you are looking for a delicious side to serve with your tacos, this cilantro-lime rice is delicious!

Ingredients

  • 1/2 tablespoon avocado oil
  • 12 oz cauliflower florets
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon lime juice
  • spicy lime tahini, for serving
  • corn tortillas, for serving
  • black beans, for serving
  • shredded lettuce, for serving
  • salsa or pico de gallo, for serving
  • lime wedges, for serving
  • avocado, for serving

Method

  1. Preheat oven to 425 degrees.
  2. Combine the cauliflower, oil, spices, and lime juice in a large mixing bowl and then pour onto a sheet pan in an even layer.
  3. Roast for 15-17 minutes until the cauliflower is tender and beginning to crisp. Remove from the oven and let cool slightly.
  4. Assemble your tacos by starting with warmed corn tortillas, shredded lettuce, black beans, cauliflower, spicy lime tahini, pico de gallo, and avocado. Serve immediately and enjoy!
