We’ve been making some version of these buffalo ranch chicken sandwiches for dinner every other week and when I make a recipe that often I know it’s time to share it with you. I feel like making a takeout style chicken sandwich can feel intimidating but trust me these are so easy to make and don’t take a ton of time.
These buffalo chicken sandwiches are so good and combine some of the best flavors – buffalo and ranch. The chicken is marinated and always comes out juicy, and the sharp cheese and creamy ranch work together perfectly. Load up your sandwiches up with your favorite toppings, and you’ll have a quick meal that everyone will love.

Sandwich Ingredients
Chicken: you’ll need two large chicken breasts for this recipe. To prep the chicken breast for sandwiches, you’ll split them in half lengthwise. Splitting the chicken breast in half helps to make them an even thickness so that they cook evenly.
Buffalo Sauce: I use my homemade buffalo sauce, but any store-bought variety will work.
Seasonings: we’re using salt, pepper, garlic powder, onion powder, paprika, and dried dill.
Cheese: a slice of cheese is the perfect finishing touch to these sandwiches. Pepper jack, Monterrey jack, or white cheddar all work well!
Ranch: I almost always have my homemade ranch dressing on hand, but you can use your favorite store-bought option if preferred.
Buns: buttery Brioche buns are always my go-to for chicken sandwiches or burgers but feel free to use your favorite!

Ingredient Variations
- Chicken Breast – don’t feel like taking the time to split the chicken breast in half? you can use chicken breast cutlets instead which are a bit thinner and perfect for this recipe. You could also swap the chicken breast for boneless, skinless chicken thighs instead. Or, use leftover shredded buffalo chicken instead.
- Cheese – need to keep these sandwiches dairy free? You can omit the cheese altogether, or use your favorite plant-based cheese instead. If you’re looking for that creamy element but don’t want to use cheese, try adding some mashed and salted avocado to your brioche buns.

How to Make The Best Buffalo Chicken Sandwich Recipe
Step One: Prep the chicken. Slice each chicken breast in half lengthwise. Then, add the halves to a mixing bowl, and add the buffalo sauce, salt, pepper, spices, and herbs. Toss until the chicken breasts are well coated. Then, cover the bowl, and let the chicken marinate while you prep the rest of the recipe.
Step Two: Cook the chicken. Heat a large skillet over medium-high heat. Once hot, add the olive oil followed by the chicken. Cook for 4-6 minutes on each side or until the chicken is golden brown and the internal temperature reaches 165 degrees Fahrenheit. Once fully cooked, remove the pan from the heat, and add one slice of cheese to the top of each chicken breast. Cover the pan with a lid, and let the cheese melt.
Step Three: Assemble. Next, remove the buffalo chicken breasts from the pan, and assemble your sandwiches. Layer the chicken on Brioche buns with the toppings and a drizzle of homemade ranch. Enjoy!
