Easy, Healthy, and Quick Shredded Buffalo Chicken

Some recipes are such staples in our home that I start to think that they are not real recipes and when I start thinking that they’re not real recipes I forget to share them with you! 

But, I’m trying to remember that the simple recipes are recipes, too and that staples like this shredded buffalo chicken are exactly what help make your eating healthy easier and more manageable.

This quick and healthy shredded buffalo chicken is made with less than five ingredients (if you don’t count spices!) and will take you around thirty minutes to make on the stove top. If you want, you can also make this recipe in the slow cooker and I have included full slow cooker instructions in the post.  

Whether you choose to make this recipe on the stove top or in the slow cooker all the same rules generally apply; dump your ingredients, let things cook, shred, and you are done! 

This shredded chicken is great to prep at the beginning of the week. You’ll have an easy protein that you can grab and reheat whenever you need!

How to Make Shredded Buffalo Chicken

This shredded chicken really is so simple to make. My two favorite ways to make it are on the stove top (this is my quick go-to method) or in the slow cooker. Using the slow cooker is a great option if you have a little more time and just want to do the whole “set it and forget it” thing. 

Stove Top: To make this on the stove, add all of the ingredients to a large pot and bring it to a simmer over medium heat. Once the buffalo sauce begins to simmer, cover, and let it simmer for 25-30 minutes until the chicken is fully cooked through.

Then, remove the lid and transfer the chicken breast to a plate. Use two forks to shred the meat and then add it back to the pot. Give it a stir to make sure that the chicken is well coated in buffalo sauce. 

Slow Cooker Option: The slow cooker version of this recipe is very similar to cooking it  on the stove. Just add all of your ingredients to the slow cooker and cook on high for two hours. Use two forks to shred the chicken and you are done!

Not only is this shredded chicken easy, it is also incredibly versatile! Need some ideas on how to use it? Here are a few great ideas: 

  • Use it in a salad! Heat up your chicken and serve it over mixed greens with all your favorite veggies.
  • Make a sandwich or wrap! Serve it between your favorite slices of bread or wrap. 
  • Get creative with a taco or quesadilla! Your favorite taco shell, melty cheese, and buffalo chicken. Delicious.

  1. I don’t usually leave reviews but this recipe was amazing! It was almost too easy to make and tastes so good. We added the chicken to some potato buns with a side of blue cheese sauce on a lazy Sunday evening. Can’t wait to try it as a base for other meals.

  6. I made this in the crockpot for buffalo chicken tacos. It came out so good and was a nice change up for traditional tacos or traditional buffalo chicken fingers–two things we have regularly in our home. We had some extra too that I’ll throw on salads later in the week. I’ll definitely be adding this to the easy weekday meal list!

  8. I made this when I was doing a round of Whole30 and it was so good!! I’m usually really bad at cooking chicken but this turned out great. I pretty much followed the recipe to a T. I put my chicken in a pan as opposed to a pot and walked away from it so the bottom got a bit burnt but it didn’t end up affecting anything. Definitely make this is you’re doing a whole 30 and even if you aren’t it’s still so good!!
