This Buffalo Chicken Sandwich recipe combines juicy marinated buffalo chicken, melty cheese, and tangy Ranch dressing on fluffy Brioche buns for the perfect bite. The sandwiches come together in a single skillet and they’re a crowd-pleasing option for everything from weeknight dinners to game day!

- 2 large (6-8 ounce) boneless skinless chicken breast
- 1/3 cup buffalo sauce
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried dill
- 1 tablespoon olive oil, plus more if needed for cooking
- 4 slices cheese (pepper jack, Monterrey jack, or white cheddar)
For Serving
- herby homemade ranch dressing
- 4 brioche buns, toasted
- Bibb lettuce leaves
- tomato slices
- thinly sliced red onion
Instructions
- Prep the chicken: slice each chicken breast in half lengthwise and then add to a mixing bowl. Add the buffalo sauce, salt, pepper, spices, and herbs to the chicken and then toss until the chicken breasts are well coated in spices. Cover and let marinade for 30 minutes or up to overnight.
- Cook the chicken: Heat a large skillet over medium-high heat. Once hot, add the olive oil to the pan and then add the chicken. Cook the chicken for 4-6 minutes per side until golden brown and the internal temperature reaches 165 degrees Fahrenheit. When the chicken is fully cooked, remove the pan from the heat and add 1 slice of cheese to the top of each chicken breast. You can cover the pan with a lid to help the cheese melt a bit.
- Assemble the sandwiches: Remove the chicken breasts from the pan and assemble your burgers on toasted brioche buns with all the toppings and a drizzle of the homemade ranch.
