Move over steamed and boiled broccoli! It’s time to give broccoli the respect it deserves by roasting!

If you’ve never tried roasting your broccoli, allow me to be the one to encourage you to do so ASAP! Roasting broccoli adds so much flavor and gives you those these perfectly crispy broccoli edges that are absolutely delicious.

This recipe for simple roasted broccoli is sure to become a staple in your kitchen. Broccoli pairs perfectly with so many proteins and this method is a super quick way to get a green veggie on the table in no time. It’ll take you 15-20 minutes tops!

The Ingredients You Need to Make This Roasted Broccoli

To make this simple roasted garlic lemon broccoli you only need a few simple ingredients and a few minutes of prep.

Here’s what you need to make this easy roasted broccoli side dish:

  • fresh broccoli florets

  • fresh garlic (fresh garlic really makes a difference, so if you can try to mince the cloves yourself instead of buying pre-minced garlic)

  • lemon juice

  • red pepper flakes (if you do not like spice feel free to leave these out)

  • avocado oil

  • salt & black pepper

Because the broccoli roasts at a high heat (425) I like to use an oil that can stand up to the heat like avocado oil. If you prefer, you could also use coconut oil or ghee if you are looking for a more buttery flavor.

I like to think of this list of ingredients as a starting point for really flavorful roasted broccoli, but you could also get creative and try adding additional spices or seasonings. For example, you could try adding lemon zest or even thinly sliced shallot to the broccoli before roasting for even more flavor. Let this list be a starting point for even more flavor combinations.

How to Make Roasted Garlic Lemon Broccoli

Step 1: Combine the broccoli florets with seasonings, fresh garlic, oil, and lemon juice in a small mixing bowl. Use a spoon to mix the broccoli and seasonings well and ensure that florets are well coated.

Step 2: Next, pour the broccoli mixture out onto a baking sheet. If you want to make a clean up a breeze, like the baking sheet with parchment paper. You want to ensure that the baking sheet is large enough so that the broccoli can lay in a single layer or the sheet pan. If the broccoli does not have enough space, it will steam, and you won’t get those crispy brown delicious bits.

Step 3: Roast the broccoli at 425 degrees for 15-20 minutes until tender yet crisp. Flip the broccoli halfway through to ensure it cooks evenly. You want the broccoli to have a slight bite to it and not be completely mushy, but also have plenty of brown roasted bits. Once you remove the broccoli from the oven, serve immediately!

Ingredients

  • 6 cups fresh broccoli florets

  • 3 tablespoons avocado oil or melted ghee

  • 3 cloves fresh garlic, minced

  • 1/2 teaspoon salt (plus more to taste)

  • 1 teaspoon red pepper flakes

  • 1 tablespoon fresh lemon juice

Method

  1. Preheat oven to 425 degrees.

  2. Cut any larger broccoli florets in half to make sure all of the broccoli is roughly the same size.

  3. Place the broccoli in a mixing bowl. Add in the oil, salt, black pepper, garlic, lemon juice, and red pepper flakes. Toss until the broccoli is well coated in the oil and seasonings.

  4. Transfer the broccoli to a large sheet pan and bake for 15-20 minutes, flipping halfway through. The broccoli should be tender and a little browned around the edges. Give the broccoli a taste halfway through to see if it needs more salt, pepper, or garlic and make any adjustments)

  5. Serve immediately and enjoy!
