This Homemade Spicy Cashew Dressing is just a little sweet, just a little spicy, and the perfect copycat version of the famous Sweetgreen dressing. It’s so easy to make and the perfect way to add some extra flavor to salads, grain bowls, veggies, and more!

Spicy Cashew Salad Dressing (Sweetgreen Copycat!)

One of my favorite dressings to get at Sweetgreen is the spicy cashew (I’m always switching between that and the green goddess ranch) so I had to make a homemade version for us all to enjoy! My version is just as good (if not better, let’s be real) and so easy to make!

Dressing Ingredients 

  • Creamy Cashew Butter: Use store-bought unsweetened cashew butter or my homemade cashew butter as the base of the dressing.
  • Lime Juice: Highly recommend freshly squeezed for this recipe.
  • Aromatics: We’re using a good amount of fresh garlic and ginger to add flavor to the dressing.
  • Toasted Sesame Oil: You should be able to find this ingredient in the Asian aisle of your local grocery store or at your local Asian grocery store.
  • Soy Sauce: You can swap this for coconut aminos if that’s what you prefer. 
  • Rice Wine Vinegar: This is a mellow vinegar with slightly sweet notes. 
  • Sriracha: This chili sauce is what gives the dressing some kick! You can add more or less depending on your preference.
  • Honey: Adds the perfect touch of sweetness. You can swap it for maple syrup if needed!
  • Cilantro: adds the best flavor and freshness to the dressing.

How to Make Spicy Cashew Dressing in 2 Easy Steps

  1. Add all the ingredients to a high-powered blender or food processor.
  2. Blend the dressing on high until smooth and creamy. You can add a bit of water (I like to start with 1 tablespoon) to the dressing to thin it out if it’s too thick.

Ways to Use

This dressing is versatile! versatile it is. Here are a few of my favorite ways to use it: 

  1. Add it to your favorite salad (duh!)
  2. Drizzle it over grain bowls like this miso glazed salmon rice bowl
  3. Use it as a dip for fresh veggies 
  4. Enjoy it as a sauce with your favorite protein
  5. Add a drizzle over roasted veggies for even more flavor

How to Store 

Store this spicy cashew dressing in an airtight container in the fridge for up to 2 weeks. Be sure to give it a stir before using!

Ingredients

Scale
  • 1/2 cup creamy cashew butter
  • 1/4 cup lime juice
  • 2 cloves garlic, smashed
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon toasted sesame oil
  • 2 tablespoon soy sauce
  • 2 tablespoon rice wine vinegar
  • 2 tablespoons sriracha
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon salt, plus more to taste
  • 1 to 2 tablespoons water, depending on desired consistency

Instructions

  1. Add all of the dressing ingredients to a high powered blender.
  2. Blend on high until smooth and creamy.
  3. If needed, add a tablespoon, or more, of water to thin to desired consistency.
