How to Make Honey Chipotle Chicken Bowls

Step One: Add all of the chicken marinade ingredients to a small bowl and whisk together until well combined. Add the chicken and let it marinade for thirty minutes or up to overnight.

Step Two: After the chicken has marinated, discard the excess liquid. Heat a large skillet over medium-high heat. When the skillet is hot, add one tablespoon of oil to the pan. Next add the chicken to the skillet and cook for 3-4 minutes on each side until the chicken is browned and fully cooked through. Remove the chicken from the pan and set aside. Be careful not to overcrowd the skillet when cooking the chicken to ensure it browns. You may need to cook the chicken in batches.

Step Three: Add all of the dressing ingredients to a high powered blender of food processor. Blend until smooth and creamy.

Step Four: Assemble your bowls. First start with your grain, then add the chicken, and finally your toppings. Drizzle the lime tahini dressing over everything and enjoy!

Smoky and Delicious Spicy Lime Tahini Dressing

One of the best parts of these bowls is the perfect spicy lime tahini dressing. Trust me, this stuff is delicious and not only works perfectly on this bowl but also as a go-to salad dressing.

What You Need:

  • Tahini
  • Chipotle peppers in adobo
  • Fresh garlic
  • Green onion
  • Cilantro
  • Olive oil
  • Salt and pepper
  • Orange juice
  • Lime juice

To make: add all of the ingredients to a food processor or blender and then blending or processing until smooth and creamy. The dressing makes more than enough so you’ll have plenty to drizzle on your bowls or salads all week long.

Store this tahini dressing in the fridge and, because it includes tahini, it will likely thicken up as it chills. If you need to thin the dressing out a bit just add a little bit of water until it reaches the desired consistency.

Tips for Perfect Juicy Chicken

The key to this flavorful bowl is the honey chipotle chicken. Whether you make these exact bowls or not, keeping a flavorful protein on hand like this honey chipotle chicken is a great idea. You can easily use it whip up a quick lunch or dinner when you are running short on time!

Here are a few tips for the best juicy chicken:

  • If you are making this recipe for meal prep you can marinate your chicken Saturday night and then cook it for the week on Sunday. This gives the chicken enough time to sit in the marinade.
  • Use a heavy bottomed (like cast iron) or a non-stick skillet. If you are using a cast iron skillet, don’t skimp on the oil to ensure that the chicken does not stick.
  • If the chicken breast is extra thick, use a sharp knife and split it in half to help it cook more evenly. This will help ensure that the chicken is tender and juicy all the way through and not overcooked in some areas while undercooked in others.

Toppings to Load Up Your Bowl

What I personally love about these chicken bowls is how customizable they are. Once you have the chicken prepared it’s just a matter of building your bowl with all your favorite toppings or whatever you have in the fridge at the time. Here are a few of personal favorite toppings to include in my bowls:

How to Store

Store the honey chipotle chicken and grains separately in the fridge for 3-5 days. When you’re ready just assemble the bowls with all of your favorite toppings.

  1. I was shocked by how good this was. It was really easy too. I will make again but half the dressing recipe. It was a lot of dressing but it was tasty.

  2. I would describe myself as very tahini skeptical. I really want to like it but generally don’t. That said, this sauce was amazing! Loved the bowls. We added red cabbage, cucumbers and cotija. Thanks for the great, quick dinner recipe.

  3. This sauce is amazing, and I’ll be making by again! I didn’t have the forethought to marinate chicken, so I just made this recipe with ground turkey and added all the marinade recipes as I cooked the meat to season it. Still really good, but the sauce is what makes it.

  4. Such a wonderful flavor! These were really excellent. I feel like no one else uses oregano to it’s full advantage the way you do! Thank you!

  5. This was SO delicious, I substituted some of the lime juice for lemon juice since I ran out and it was still very tasty.

PS If you’re doubling or tripling the recipe for the chicken and marinade, i’d still stick with the same amount for the dressing. Plenty of dressing to go around.

  6. Monica Champaneria says:

Oh my goodness, this bowl is SO delish! The sauce, chicken, everything!
I followed the recipe to a T, the only modification I made was to use only 1 tbsp of honey in my chicken marinade versus 2, and the flavor was still perfect for my taste buds.
Thank you so much for continuing to post yummy, easy and fun meals for us to try

  7. Another meal prep winner! In the future, I would probably make half the amount of sauce. I ended up with a lot of leftovers. I also chose to broil my chicken. Highly recommend!

  8. Britany Pratt-Knight says:

DELICIOUS! The marinade, the tahini dressing was TAHINI-ING! Everything was tasty! I added black beans, peppers, and red onion. Yummy!

  9. Flavor is the word of this dish! So so so good! Made it for meal prep and it’s been amazing! Love the chicken marinade and the dressing!

  11. I made this as meal prep for lunches and it is SO good! One thing I love about Ashlea’s recipes is that they are always packed with flavor. This recipe does not disappoint!

  12. Super delicious chicken marinade! Another winner from Ashlea!

  13. This was delicious! My somewhat picky kid eaters both loved the chicken, and I adore tahini- the dressing was spot on. I thought we made enough for leftovers but it was too good 🙂

  14. So glad I tried this! My kids who do not enjoy chicken ate multiple helpings of it with this marinade!!!
