Burrito Bowl Ingredients
Shrimp: you’ll need one pound of raw peeled and deveined shrimp for this recipe.
Coconut Sugar: a little coconut sugar is used in the shrimp seasoning to help give the shrimp the perfect golden brown crust.
Lime Zest: you can’t have a burrito bowl without a little lime flavor, in my personal opinion! the lime zest in the shrimp seasoning really makes the flavor of the shrimp pop!
Spices: a combination of chipotle powder, paprika, cumin, salt, and pepper give the shrimp the best flavor.
Cilantro Lime Coconut Rice: I use my delicious cilantro lime rice recipe as the base for these burrito bowls!
Toppings: you can add whatever toppings you like to your burrito bowl to really make it your own. I’ve included some suggestions below if you need a few ideas!
Olive Oil: you’ll use a little olive oil to cook your shrimp!
Ingredient Swaps and FAQs
- Shrimp – don’t love shrimp? you could easily use the same seasoning rub on white fish or salmon instead.
- Coconut sugar – you can easily swap the coconut sugar for brown sugar if you prefer.
- Oil – swap the olive oil for avocado or coconut oil if you prefer.
- Rice – don’t want to use white rice? swap it for brown rice or even cauliflower rice if you like!
How to Make This Shrimp Burrito Bowl Recipe
Prep the Shrimp: Add the coconut sugar, lime zest, chipotle powder, paprika, cumin, salt and pepper to a small bowl and stir until well combined. Pat the shrimp dry and then add to a mixing bowl. Sprinkle the seasoning blend over the shrimp and toss until the shrimp are well coated.
Cook the Shrimp: Heat a large skillet over medium heat. Once hot, add the olive oil to the pan and then add the seasoned shrimp. Cook for 2-3 minutes on each side until the shrimp is opaque and pink around the edges.
Assemble the Bowls: Start with a bed of rice and then top with the shrimp, black beans, shredded lettuce, avocado, pico, sour cream, etc.

These shrimp burrito bowls are perfect to meal prep in advance! A little bit of prep can make assembling these bowls incredibly easy. If you want to meal prep this recipe here are a few tips:
- Make the shrimp seasoning in advance – mix together the coconut sugar, lime zest, and spices in a small mixing bowl and then store in an air-tight container in the fridge for 2-3 days until you are ready to use.
- Prepare the rice – I love to make a big batch of cilantro lime rice in advance to have on hand for burrito bowls. You can store the rice in the fridge for 3-5 days or freeze it!
- Chop the veggies and toppings – that way all you have to do is make the shrimp, reheat the rice, and then pile on the toppings!
