I love a good burrito bowl and these ground turkey burrito bowls do not disappoint. They’re quick, so easy to make, and perfect to meal prep in advance for a quick lunch or dinner.
Lately, I’ve been prepping the ingredients for these bowls over the weekend so that I can quickly assemble them for lunch during the busy work weeks. They literally take minutes to whip up once you have all the ingredients ready to go!

The healthy ground turkey burrito bowls are full of lean protein from both ground turkey and beans, and packed with veggies. You can easily customize them with all your favorite toppings, which is the best part!
Ground Turkey: you can use either lean ground turkey breast or go with ground turkey thighs. Both will work well in this recipe!
Spices & Aromatics: a combination of fresh onion, garlic, tomato paste and plenty of dried spices help to give the ground turkey some delicious flavor.
Chicken Broth: along with the tomato paste this helps to give the ground turkey a little sauce.
Arrowroot Starch: this is my secret ingredient to ensure that ground turkey has the right consistency. It thickens everything just slightly but not too much.
Black Beans: burrito bowls need beans, in my personal opinion, and black beans are my favorite.
Rice: make a batch of my cilantro lime coconut rice to complete these bowls!
Ingredient Swaps and FAQs
Ground Turkey – this recipe is easy to customize with the protein of your choice! Feel free to use ground chicken or ground beef instead of turkey.
Arrowroot Starch – don’t have arrowroot starch? you can swap it with cornstarch or tapioca starch instead.
Chicken Broth – veggie broth or water will also work as a replacement for chicken broth in this recipe!
Beans – I love black beans in my bowls but kidney or pinto beans are also great options! feel free to leave them out altogether if you prefer.
Rice – both brown rice and white rice are great options. you could also use cauliflower rice!
How to Make This Burrito Bowl Recipe
Step One: Heat a large skillet over medium-high heat.
Step Two: Once the skillet is hot, add in a bit of oil and then the ground turkey. You’ll brown the meat and break it up as it cooks.
Step Three: Then, add the garlic and onion. Continue to brown the meat until it is no longer pink.
Step Four: Next, lower the heat to medium and add the tomato paste, apple cider vinegar, and spices. Cook everything for another minute until fragrant.
Step Five: Add in the chicken broth and stir until well combined. Let the ground turkey simmer a bit in the broth until thickened and then remove the skillet from the heat.
Step Six: Now, assemble the burrito bowls! Start with a bed of rice and then top with the ground turkey mixture, then add black beans and all you favorite toppings!
Turkey Burrito Bowl Toppings
Once you have the ground turkey, beans, and rice prepped, all you have to do is decide on your toppings! When it comes to these ground turkey burrito bowls the topping ideas are endless. Here are a few of my favorite things to include in my burrito bowl:
shredded romaine lettuce
avocado
pico de gallo
sour cream or Greek yogurt
shredded cheddar cheese
sliced radish
fresh cilantro
salsa
green onion or red onion
Healthy Ground Turkey Burrito Bowl Meal Prep
These bowls are perfect to meal prep in advance! A little bit of prep can make assembling these bowls incredibly easy. If you want to meal prep this recipe here are a few tips:
Make the ground turkey mixture in advance – store in an airtight container in the fridge fro 3-5 days.
Prepare the rice and beans – Cook the rice and beans when you make the ground turkey and then store in airtight containers as well.
Chop the veggies and toppings – that way all you have to do is reheat the ground turkey, beans, and rice and then pile on the toppings!

I completely underestimated this recipe – IT IS SO DAMN GOOD!! I used to always throw spices into meat and hope for the best but this recipe makes the meat taste out of this world good. I’ve used ground beef, ground pork AND ground turkey and they all turn out delicious. The cilantro rice is always a winner!
