Flavorful honey chipotle chicken bowls with fresh veggies, and the most delicious spicy lime tahini dressing all come together in this filling and healthy lunch bowl. These bowls are hearty, full of whole grains and veggies, and a filling and delicious way to keep you feeling energized!
Honey Chipotle Chicken Bowls with the Best Spicy Lime Tahini Dressing
Everything tastes just a little bit better in a bowl, am I right? These honey chipotle chicken bowls are no exception. If I had to dream up the perfect lunch, it would be these hearty bowls. Here’s what they have going on:
Tender and juicy honey chipotle chicken that has been marinated overnight and cooked to perfection.
Lots of fresh veggies. I’m talking pickled onions, avocado, crunchy cabbage…all the good things.
A spicy lime tahini dressing made with chipotle peppers, plenty of fresh lime juice, and lots of fresh herbs.
This recipe is swimming with deliciousness and also a great one to meal prep in advance for your lunch all week. I can promise that you will not get tired of these bowls. Keep reading to learn how to make them!
Step One: Add all of the chicken marinade ingredients to a small bowl and whisk together until well combined. Add the chicken and let it marinade for thirty minutes or up to overnight.
Step Two: After the chicken has marinated, discard the excess liquid. Heat a large skillet over medium-high heat. When the skillet is hot, add one tablespoon of oil to the pan. Next add the chicken to the skillet and cook for 3-4 minutes on each side until the chicken is browned and fully cooked through. Remove the chicken from the pan and set aside. Be careful not to overcrowd the skillet when cooking the chicken to ensure it browns. You may need to cook the chicken in batches.
Step Three: Add all of the dressing ingredients to a high powered blender of food processor. Blend until smooth and creamy.
Step Four: Assemble your bowls. First start with your grain, then add the chicken, and finally your toppings. Drizzle the lime tahini dressing over everything and enjoy!
Smoky and Delicious Spicy Lime Tahini Dressing
One of the best parts of these bowls is the perfect spicy lime tahini dressing. Trust me, this stuff is delicious and not only works perfectly on this bowl but also as a go-to salad dressing.
What You Need:
Tahini
Chipotle peppers in adobo
Fresh garlic
Green onion
Cilantro
Olive oil
Salt and pepper
Orange juice
Lime juice
To make: add all of the ingredients to a food processor or blender and then blending or processing until smooth and creamy. The dressing makes more than enough so you’ll have plenty to drizzle on your bowls or salads all week long.
Store this tahini dressing in the fridge and, because it includes tahini, it will likely thicken up as it chills. If you need to thin the dressing out a bit just add a little bit of water until it reaches the desired consistency.
Tips for Perfect Juicy Chicken
The key to this flavorful bowl is the honey chipotle chicken. Whether you make these exact bowls or not, keeping a flavorful protein on hand like this honey chipotle chicken is a great idea. You can easily use it whip up a quick lunch or dinner when you are running short on time!
Here are a few tips for the best juicy chicken:
If you are making this recipe for meal prep you can marinate your chicken Saturday night and then cook it for the week on Sunday. This gives the chicken enough time to sit in the marinade.
Use a heavy bottomed (like cast iron) or a non-stick skillet. If you are using a cast iron skillet, don’t skimp on the oil to ensure that the chicken does not stick.
If the chicken breast is extra thick, use a sharp knife and split it in half to help it cook more evenly. This will help ensure that the chicken is tender and juicy all the way through and not overcooked in some areas while undercooked in others.
Toppings to Load Up Your Bowl
What I personally love about these chicken bowls is how customizable they are. Once you have the chicken prepared it’s just a matter of building your bowl with all your favorite toppings or whatever you have in the fridge at the time. Here are a few of personal favorite toppings to include in my bowls:
Store the honey chipotle chicken and grains separately in the fridge for 3-5 days. When you’re ready just assemble the bowls with all of your favorite toppings.
I hope you give these Honey Chipotle Chicken Bows a try! They are perfect for a quick and easy lunch!

Oh my goodness, this bowl is SO delish! The sauce, chicken, everything!
I followed the recipe to a T, the only modification I made was to use only 1 tbsp of honey in my chicken marinade versus 2, and the flavor was still perfect for my taste buds.
Thank you so much for continuing to post yummy, easy and fun meals for us to try
Another meal prep winner! In the future, I would probably make half the amount of sauce. I ended up with a lot of leftovers. I also chose to broil my chicken. Highly recommend!
I made this as meal prep for lunches and it is SO good! One thing I love about Ashlea’s recipes is that they are always packed with flavor. This recipe does not disappoint!
This was delicious! My somewhat picky kid eaters both loved the chicken, and I adore tahini- the dressing was spot on. I thought we made enough for leftovers but it was too good 🙂
This recipe is by far one of our all time favorites – we make a double batch of this salad dressing every couple of weeks and always have the ingredients on hand. It’s truly our go-to salad/meal! We are vegetarian so we’ve never made it with the chicken, but we have used the marinade ingredients with tofu and it’s turned out great (also we’ve skipped that part completely sometimes for simplicity and it also is still delicious). We’ve also hard boiled eggs and sliced them and added to the top – also delicious with it! I feel like this is one of the best salad recipes out there.
Absolutely delicious. I substituted tempeh for the chicken for a meat-free meal. I marinated the tempeh overnight and baked at 350 for 20 minutes. So flavorful! Thanks, Ashley!
This was so good!!! My fiancé said “this is the type of chicken I want to eat forever” haha. The sauce was bomb too. I used chicken thighs and we had it with some rice and leftover kale salad. So good, will definitely be using this chicken marinade + sauce all the time! Thank you!
I recently found your blog (I’ve been living under a rock), and I’m so happy I found you! This recipe was so good! I’ve already saved more of your recipes, and I can’t wait to cook again. Thank you!
Love this recipe!!! So tasty.
2 Questions – how long can the dressing last in the fridge and is it okay to freeze the chicken if you didn’t use all of it?
Hi Julie! The dressing will last 5-7 Days in an air-tight container in the fridge. For the chicken, if you haven’t cooked it all, it will be okay to freeze, but the texture may change after reheating, Thanks for your question!
This is one of my absolute favorite recipes to meal prep for lunches! My favorite thing about Ashlea’s recipes are her dressings/sauces. They are amazing every time!
This recipe is amazing! The marinade almost caramelizes on the chicken, and it’s delicious. The sauce is fantastic; I want to make a big batch of it next time just to keep in the fridge as a dressing.
I made this when I had family over and it was SUCH A HIT! My mom and sister both asked for the recipe. I could dip chips in that sauce everyday 😁. I will definitely make this again!
Loved this dressing, and could be used for so many things! Added some toppings to use up summer garden veggies as well. Will definitely be making this again!
Delicious! Working from home, with a toddler and a baby on the way, I am always looking for easy recipes that are flavorful and full of real foods. The sauce is so yummy, the marinade was perfect and so easy to throw together between meetings and nap time! 100% going into our monthly recipe rotation.
My husband and I made these bowls for lunch one day about a month ago, and we’ve meal prepped them every week since! They are the perfect combination of flavors, keep us full, and we feel great about what we are putting into our bodies. Love this recipe and it has become a staple in our house.
Made. It. Love it. Husband approved. Will be a weekly staple. The marinade- I mean, there are no words. Truly delicious. The dressing? Woah. I’m obsessed! Thank you!!!!
This recipe is soooooo good! And it’s also very versatile to add whatever veggies you have on hand. I added beets, cucumbers, carrots, tomatoes, red pepper, cilantro, avocado, and lettuce! Yum!
This tastes as beautiful as it looks! I love the versatility with this meal. I’ve been using the tahini dressing on salads for the last week! The chicken was so good that we had no leftovers, so I’ll be doubling the recipe next time.
This recipe was so good! The marinade was amazing. I didn’t have the chipotle peppers in adobo even though I looked for them at the grocery store but was still so flavorful. Definitely keeping this as a staple!
Delicious!! We only did two adobo peppers in the dressing and it was just the right amount of spicy. We also made your pickled onions to top it. Will definitely be adding these bowls to our dinner rotation!
My husband and I LOVE this recipe. We made everything per instructions (double.it.) except for reducing the tahini dressing by 1 adobo pepper…Perfection! We want to put that dressing on everything. We also made your quick pickled onions and they are now going to be a staple in my fridge. Thank you for your amazing recipes!
These bowls are amazing!! The flavor is so good, and it is very versatile. We used what we had (as for veggies), and it turned out so delicious. We added cucumber along with tomatoes, carrots, cilantro, butter lettuce, avocado, and used marinated onions (No Crumbs Left) rather than pickled onions. Everything was so fresh and tasty. The chicken has such a great glaze on it from the marinade and the cooking method. You can’t go wrong! Thank you as always, Ashlea!
This recipe is AMAZING! I’m always looking for new bowl or salad recipes and this will be on repeat for sure. The dressing is incredible with the perfect amount of kick. I’m excited to have it again for lunch tomorrow!
This was such an easy and flavorful dinner meal! So easy one pan and a blender so the cleanup is a breeze. Such an amazing blend of tangy and spicy I want to prep this meal for weeks on end and my roommates loved it too!!!! 10/10 recommend
This recipe will be on repeat at my house! The flavors were amazing with the chicken marinade and the dressing. All three of my teenagers gave it raving reviews (which never happens!).
I tried this recipe for lunch yesterday and it was super satisfying and flavorful! I love all of the colorful toppings and the citrusy bite from the lime. I used tofu in place of the chicken, and that swap worked out perfectly. Thank you for this recipe idea, Ashlea!
This recipe was so very good!! We will definitely be making this again. The only substitution we made was a mix of cayenne and smoked paprika in place of chipotle powder for the marinade.
Omg this tahini lime dressing is a DREAM. I seriously could eat it all day every day! Next time I’ll be making a double recipe – I’ve been pouring it on everything to jazz up all my fridge leftovers.
This recipe was incredibly flavorful, balanced, and so insanely delicious! I couldn’t find chipotle in adobo, so subbed in some chipotle powder and apple cider vinegar. I also baked chicken thighs with bone-in rather than chicken breast. With the acidity from Ashlea’s pickled red onions, the tender flavorful chicken, lettuce, scallions, avocado, brown rice, and beautifully smoked lime tahini dressing, this meal will definitely be placed on rotation. YUM!!!!
Oh my goodness, I am in LOVE with this recipe! There are so many fun flavors in the meat and the dressing! I mixed the dressing into EVERYTHING it was so good! I’m usually not a huge fan of the taste of meat, but the marinade in this made it taste soo good! I ended up leaving out the cilantro from the dressing (because the hubby is not a fan) but thought it still tasted amazing! The best part was adding all the greens I’ve been trying to use up from my fridge—it feels so good when you know you’re eating healthy!
So glad I made extra chicken so we have delicious lunches for tomorrow! The dressing is one I will make on a regular basis. Thanks for the delicious recipe!
This spicy lime tahini dressing is amazing! I am a saucy gal and eat sauces pretty much on anything!! always wondering what to do with the leftover chipotle peppers and now I have my answer! It’s perfectly balanced with the tahini and the heat is present but not over powering! Perfect for dipping fries, used as a marinade and drizzled on any recipe! Thank you!!
This recipe was delicious! My husband and I made it for dinner and my 3 year old even ate some too. We didn’t have any chipotles in adobo but we used chipotle powder and it was just a hint spicy and perfect. This will make great leftovers too! Thank you!
This bowl is INSANE. It is so delicious! Perfect for meal prep. My mom and I made it for dinner one night, then had the leftovers for lunch the next couple days. So yummy!
This tahini is AMAZING. We ended up making tacos instead of bowls and we couldn’t get enough ! Also made the pickled onions to top it off and so glad we did

Hi! Any suggestions for a different dressing? We have a sesame allergy in our house and can’t use tahini.
Hi, Mia! any dressing will really work here! I have a jalapeño ranch on my site that would be great!
