Healthy Burger Bowls with Special Sauce

These healthy burger bowls with special sauce are the perfect way to get your burger fix with even more fresh veggies and flavor. These bowls are so easy to make, use only real food ingredients, and the delicious “special sauce” dressing pulls everything together. This recipe is Whole30 compliant, Paleo-friendly, and low carb.

Healthy Burger Bowls

Healthy Burger Bowls with Special Sauce

Burger bowls or “burger salads” were one of the first meals that I regularly made when I switched to a Paleo lifestyle. Years later they are still my absolute favorite thing. Honestly, the burger bun just gets in the way at this point.

These healthy burger bowls with special sauce are packed with all the classic burger toppings and can easily be customized to add even more veggies and toppings. A delicious creamy special sauce ties everything together so you get that perfect burger bite.

Watch How to Make This Recipe

Serve your healthy burger bowls with a side of  crispy homemade air fryer to French fries or roasted potato wedges with chipotle lime aioli for the ultimate weeknight meal that is Paleo friendly, Whole30 compliant, and so GOOD.

Flavorful Ground Beef  for Delicious Burger Bowls

When it comes to the ground beef in these burger bowls you have a few options. You can go the traditional route and serve your burger bowl with a burger patty or crumble the ground beef as shown here. Both are great options and there is really no “wrong” way. With either option you are going to get perfectly seasoned and flavorful ground beef.

Here are a couple of tips and tricks:

  • If you decide to make burger patties you can easily melt sliced or shredded cheese on each patty like you would with a traditional burger.
  • Making burger patties is a great option if not everyone wants to go the burger bowl route. You can make both traditional burgers and burger bowls with the patties.
  • If you crumble the beef, be sure to drain any excess fat from the meat or use a slotted spoon to remove it from the pan before adding it to the bowls.
  • Don’t overcook your beef! There’s nothing worse than dry, tough hamburger meat.
  • Don’t love ground beef? You could easily make this recipe with ground turkey!

The Best Burger Bowl Toppings

romaine lettuce, pickles, tomatoes, red onion in a white bowl

Next to the juicy ground beef, the toppings are really the best part of any burger. These burger bowls keep things a bit classic and use delicious toppings like:

  • Fresh tomato
  • Tangy pickles
  • Red onion
  • Herby dill

Of course, you can get even more creative with your toppings! What is great about burger bowls is that there is plenty of room for even more fresh toppings.

Here are a few more topping ideas to try:

  • Crispy bacon
  • Grilled veggies like zucchini, peppers, and onions
  • Creamy avocado
  • Shredded carrots
  • Shredded cabbage
  • Fresh or pickled hot peppers like jalapeños or pepperoncinis
  • Mushrooms
  • Shredded cheese
  • A fried egg
  • Fresh herbs like dill or parsley
  • Sliced green onion

How to Make the “Special Sauce”

Since these are burger bowls, there is no place to spread on your favorite condiments like mayonnaise, ketchup, or mustard. So instead, this recipe using a special sauce, that includes all three, as the “dressing” for the burger bowls.

Special Sauce Ingredients

  • Mayonnaise
  • Ketchup
  • Yellow mustard
  • Pickle juice
  • Dill relish
  • Spices and seasonings

To make the sauce, add all of the ingredients to a small mixing bowl and stir until they are well combined. Remember, you can always adjust a recipe to fit your tastebuds! If you want a little more tang in the dressing add more pickle juice. Want more mustard flavor? Add a little more. Do not be afraid to get in there and make this your own!

If you are concerned about making sure this recipe stays Whole30 compliant, be sure to check the labels on your ingredients before using them to make the sauce. You will want to use a Whole30 compliant mayonnaise, ketchup, and dill relish in this recipe to keep it Whole30 friendly.

  4. OMG. I’m not going to lie, I’m getting real sick of “low carb” recipes. I find a lot are boring and lack flavor and definitely don’t satisfy the craving. This one does. I wanted a cheeseburger and this recipe delivered. I subbed bread and butter pickle juice but used the new TJ’s dill pickle mustard for the sauce. Turned out amazing. It was filling and delicious and it will be added to my regular rotation! Another easy recipe winner from Ashlea!

  11. Excellent recipe! I honestly enjoy these more than a burger on a bun because I can fill it with more toppings. My favorite add ins are roasted beets, pickled onions, and avocado chunks. Fantastic sauce! Also amazing with cajun sweet potato oven fries. Thank you!

    • Cajun sweet potato fries sound amazing! I’m so glad you loved the recipe, Kristy! Thanks for sharing!!

  12. So yummy! To make it easier I used frozen burger patties. Melted cheese on top and added sautéed mushrooms. The special sauce is so good especially with the dill. Easy to make salad bowls for me and burgers with bread buns for my partner.

    • I’m so happy you made this recipe work for you, Eunice! This idea is so smart! Thanks for sharing!

    • Yay! I’m so glad this has become a family favorite! Thanks for taking the time to leave a review, Jessica!

  18. A quick, easy, and delicious dinner (or lunch) option. I love how versatile this recipe. I modified a bit by cooking ground turkey with sliced up sweet onions since I don’t care for raw onion. I also added a ton of veggies to the bowl (peppers, cucumber, shredded carrot, pickles, and grape tomatoes), If I had olives and avocado on hand I would have tossed those in two. I opted to sprinkle some shredded cheddar on top of the meat/onion mix and also served with a slice of toasted rustic bread but I could def leave the bread out next time and still be satisfied. this will definitely be made again, and I may try it with meatless crumbles for a vegetarian version.

    • That sounds so good, Sara! I’m so happy you made this recipe work for you. Thanks for sharing!

  19. This dish is now a weekly request from my husband! We love it and the special sauce is so delish!

  20. I made this for a last minute dinner, and it will be a definite weekly repeat! The sauce is amazing, it really brings the whole burger bowl together.

  21. I LOVE this recipe!!! I’ve made this twice for my mom and my brother and both times they (and I) drooled over it. So good. I am making it again tonight because it is such a hit. Thanks for making this recipe, because it’s super quick, healthy, and still a yummy burger flavour that just hits the spot. NOM.

  22. So good and so easy! The special sauce really brings it all together. I added some chopped red and yellow bell peppers and drained and rinsed black beans. I had it all week for my lunch and it was perfect. Thank you for the great recipe!

    • You’re so welcome, Brittney! The addition of the peppers and black beans sounds wonderful! Thanks for taking the time to leave a review!

  23. This is my new favorite! I usually opt for a mexican / burrito bowl if i’m putting together a bowl, but this is going to be my new go-to! We stuck with mayo as the sauce base, but after reading a comment below I think I’ll try the greek yogurt / mayo mix. Added your pickled onions to this as well – YUM! I love the simplicity of your ingredients – I don’t feel like I need to buy out the paleo aisle at Whole Foods before making anything and you offer great topping / meat alternatives – thank you!!

    • You’re so welcome, Ashley! I’m so happy you’re going to make this recipe work for you! Thank you for sharing!

  24. This is so good! My husband is very against bullets burgers (lol) but we both love this when we want that burger fix.

  25. ABSOLUTELY DELICIOUS!! Healthier version of a greasy burger. I actually used 3T greek yogurt and 1/2T of Mayo to make the special sauce. Didn’t miss the extra Mayo and cut a few calories!! Had this 2 nights in a row. Thanks so much for sharing!

  26. This was absolutely delicious- and so easy to make (and use whatever is on hand / customize). Seriously such a great meal that isn’t too heavy.

  27. Definitely a winner. A great spin on a protein-style/lettuce-wrapped burger with less mess! The sauce was a perfect balance, and no one missed the buns. When I’m craving a big juicy burger, this is my new go-to!

  28. I had been eyeing this recipe for a while and finally bought all the ingredients to make it tonight (adding some avocado as well) and this was such a great dinner! Loved the sauce, the extra dill flavor and the idea is just genius, for those of us who prefer no buns! Love it!

    • Hi, Nicki! I like dill pickle juice but you could really use either and I’m sure it would be fine. Hope that helps!

  29. Easy and delicious! I will 100% make this for food prep. Put the meat in mini containers by serving so I can heat it up and throw it on a salad quick. The sauce was so good too!

  30. This is a family favorite in our house! I have to double everything up, bc my kids actually have seconds. We used Beyond Meat last time we made it and it was awesome. And we always add lots of random veggies we have on hand.

    • This has become our Monday night standby. It’s so easy and just takes one stress out of the day. I also make 4x batches of sauce and seasoning to get us through the month. Thank you for making Mondays easier! Also, we’ve now used ground turkey and it’s just as delicious!

      • I’m so happy you’ve made this recipe work for you and that it’s become a staple for y’all! Thanks for taking the time to leave a review, Mary!

  33. This is the very first recipe I made from your site and wow wow wow. I love to keep it handy for when I crave a tangy picky burger but want something healthier and more nutritious. 34. Quick and delicious! Love this healthier option to eating a burger. Can’t wait to make this again!

  35. Our new family favorite! Everyone could add what they wanted. Even my teenage son ate it, which was amazing considering he doesn’t eat salads! I will define adding this to my rotation. Thank you!

  36. I found this blog over the summer and have made this recipe countless times since. It has become a weeknight staple. I love that unlike other blogs, not only does this recipe say that it’s quick to make, but it is actually quick and easy to make. Plus, I pretty much always have all the ingredients on hand so I don’t have to plan ahead, and the special sauce is to die for! I always make extra!

  37. THESE ARE EXCELLENT. My husband is not normally a fan of ground beef (too much hamburger helper as a kid!) and this is a favorite for him too. We have made multiple times and enjoyed every bite. Thanks for an excellent recipe, Ashlea!

  38. This is a weeknight staple in my house! All the flavors of your favorite cheeseburger but so much healthier than eating it on a roll. Quick, easy, delicious.

The meat is so flavorful, and I love how there’s so much room for customizing the bowls to individual tastes.

  45. Game changer! I found this recipe early in summer, and I make it multiple times per month! It’s easy and satisfying. Now it’s becoming a game day favorite.

  46. My husband and I LOVE this recipe! Such an easy week night dinner with leftovers for lunch the next day! I even convinced him on multiple occasions to have this salad instead of regular burger, and each time he admits that it hit the burger craving perfectly! Great recipe, in our week night rotation!

  47. Love, love, looooove this! All the best parts of a burger and hits the spot when craving a burger.

  48. The best whole30 meal I’ve ever made! All of Ashlea’s recipes are easy to make but so full of flavor! I’ve tried so many and every one of them is a keeper ❤️

  49. Not sure what I can say that has been said – but this was AMAZING!

The recipe is super easy to make, and the sauce. Can one drink it, asking for a friend? I also love that you could easily swap ground beef for turkey to make it a little lighter.]

I will keep this in rotation for sure!

  50. This is one of our favorite recipes! We have it every other week and we make the special sauce any time we have oven fries. We have a different comb of “toppings” every time. The possibilities are endless. So easy and super tasty. I’ve made it with turkey and beef. Prefer beef, but both were delicious. This helped us survive two Whole30s at the beginning of the quarantine.

    Hubby loved it.

  61. Made this one day when the hamburger buns I bought happened to be moldy. This was AMAZING. The recipe is written in a way that made me confident that I could do some substitutes or leave somethings out and still have it be good. This was important because I was making this in a pinch so flexibility was key. I may never go back to eating a burger the classic way again. Such a great recipe!

  84. Loved this recipe! I grilled my onions and it reminded me of In & Out Burger protein style! Love it. 🙂

  85. We made this the other night and inhaled it so quickly we forgot to take pictures. We aren’t currently strictly paleo (or Whole30), but this was delicious enough to completely satisfy our burger cravings! The beef seasonings were delicious (better than some burgers we’ve had), and the special sauce… Mmmm, mmmm, mmmm! And it came together SO quickly! This will be a regular week-night staple. It would be easy to turn this into a “grilled chicken [sandwich] bowl” or something similar—the sauce makes it. Can’t wait to make it again!

  86. My husband made this for dinner tonight and it was delicious! Didn’t miss the bun at all. Thanks you!

  96. On day 26 of 30 of my Whole30 and I think I’ve made these burger bowls at least 8 times. Burger patties instead of ground beef work well if you’re in a pinch. The protein options are endless! I have a jar of secret sauce in my fridge at all times now!
