These healthy and delicious sheet pan shrimp fajitas are a quick and easy recipe that will only take you around thirty minutes to make.

To save even more time you can chop the veggies and make the marinade in advance and then toss everything together right before you are ready to cook. 

You can serve the shrimp fajitas in tortillas or lettuce wraps, or turn them into a hearty burrito inspired bowl with rice, beans, and all your favorite toppings. I know you will love this quick and easy recipe!

Sheet Pan Shrimp Fajita Ingredients

Large Shrimp: I like to use shrimp that are on the larger side for this recipe but feel free to use your favorite variety of shrimp. Peel (you can leave the tails on if you like) and devein the shrimp before cooking.

Bell Peppers: Orange, green, and yellow bell peppers were my colors of choice for this recipe, but feel free to use any combination of bell peppers that you like.

Red Onion: I like the flavor and color of red onion but you could also use white onion or a sweet yellow onion.

The Shrimp and Veggie Marinade

What gives these sheet pan shrimp fajitas such flavor is the delicious and easy to make marinade that coats the shrimp and vegetables. The marinade is a combination of various spices and aromatics that pack a punch of flavor.

To make the marinade you’ll need: 

  • olive oil
  • fresh lime juice
  • lime zest
  • cumin
  • dried oregano
  • paprika
  • chipotle powder
  • garlic powder
  • chili powder
  • red pepper flakes
  • salt + pepper

The Most Delicious Cilantro Lime Crema

Traditional Mexican crema is made from a combination heavy cream, buttermilk, and lime juice. This recipe uses a combination of Greek yogurt and a little mayonnaise to achieve a similar texture and tangy flavor.

To make the crema you will need: 

  • full fat Greek yogurt
  • mayonnaise
  • lime juice
  • lime zest
  • salt

How to Make These Healthy Shrimp Fajitas

Step One: Make the marinade by combining the spices, oil, lime juice, and lime zest in a small mixing bowl.

Step Two: Next, pour half the fajita marinade on the veggies and toss until the vegetables are well coated in the marinade. Pour the veggies out onto a sheet pan that has been lined with parchment paper. Bake for 15 to 20 minutes at 425 degrees until the veggies are tender yet still crisp.

Step Three: While the veggies are in the oven, pour the other half of the marinade on the shrimp and stir until well coated. Let the shrimp marinate while the veggies are cooking.

Step Four: Now, make the cilantro lime crema. Add all of the ingredients to a high powered blender or food processor. Blend or process until the crema is smooth and creamy.

Step Five: Once the veggies are tender, add the shrimp and bake for another 5-7 minutes until the shrimp is cooked through.

Step Six: Now it’s time to assemble the fajitas: start with a corn tortilla, then add the peppers/onions, and then shrimp. Top with cotija, pickled onions, fresh cilantro, crema, and whatever other toppings your heart desires!

How to Serve Shrimp Fajitas

Not only are these shrimp fajitas easy, they are incredibly versatile when it comes to serving. The obvious option is to serve the shrimp fajitas in your favorite tortillas. You could also use large romaine lettuce leaves or butter lettuce cups for serving instead.

If you want to go the untraditional route, you can also turn the fajitas into shrimp fajita veggie bowls.

To serve them this way, place the fajitas over your favorite bed mixed greens and then pile on all of the toppings. You can also serve the shrimp and veggies over cilantro lime rice or cauliflower rice with a salad or veggies on the side.

The cilantro lime crema really brings everything together but there are few other toppings that can really help take these fajitas over the top:

  • pickled onions
  • fresh tomatoes
  • shredded romaine lettuce
  • chopped cilantro
  • fresh jalapeño slices
  • salsa
  • lime juice and zest
  • cotija cheese

For the Fajitas:

  • 1 1/2 pounds large peeled and deveined shrimp
  • 3 bell peppers (orange, green, and yellow), thinly sliced
  • 1 small red onion, thinly sliced

Marinade:

  • 1/3 cup olive oil
  • ¼ cup fresh lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon chipotle powder
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes or cayenne pepper (optional)

    So good!!! I happened to have all of the ingredients and it turned out perfectly (had to sub a poblano for the bell peppers). Amazing!






  2. I was all ready to make this recipe with shrimp I hdd in the freezer and decided at the last minute to make it with tofu instead. Delicious!!!! So easy and it came out great. I did marinate the tofu (after pressing it) and cooked it in the sheet pan with the veggies when the recipe called for the shrimp. Came out so tasty and good! Thank you for the recipe. This will be on my “rotate” list!
