Next add the chicken to the skillet and cook for 3-4 minutes on each side until the chicken is browned and fully cooked through. Remove the chicken from the pan and set aside. Be careful not to overcrowd the skillet when cooking the chicken to ensure it browns. You may need to cook the chicken in batches.
Step Three: Add all of the dressing ingredients to a high powered blender of food processor. Blend until smooth and creamy.
Step Four: Assemble your bowls. First start with your grain, then add the chicken, and finally your toppings. Drizzle the lime tahini dressing over everything and enjoy!

- 1 pound chicken breast, cut into pieces
- 1 tbsp avocado or coconut oil
For the chicken marinade
- ¼ cup lime juice
- ¼ cup orange juice
- ½ tsp chipotle powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 2 tsp salt
- 1 tsp garlic powder
- ½ tsp onion powder
- 2 tbsp honey
For the Dressing
- ½ cup tahini
- 3 chipotle peppers in adobo
- 2 cloves garlic
- ¼ cup green onion
- ¼ cup cilantro
- ¼ cup olive oil
- 1 tsp salt
- ¼ cup water
- ¼ cup orange juice
- 1/4 cup lime juice

- Brown or white rice or quinoa
- Romaine lettuce
- Cilantro

Delicious!! We only did two adobo peppers in the dressing and it was just the right amount of spicy. We also made your pickled onions to top it. Will definitely be adding these bowls to our dinner rotation!

These bowls are amazing!! The flavor is so good, and it is very versatile. We used what we had (as for veggies), and it turned out so delicious. We added cucumber along with tomatoes, carrots, cilantro, butter lettuce, avocado, and used marinated onions (No Crumbs Left) rather than pickled onions. Everything was so fresh and tasty. This recipe was incredibly flavorful, balanced, and so insanely delicious! I couldn’t find chipotle in adobo, so subbed in some chipotle powder and apple cider vinegar. I also baked chicken thighs with bone-in rather than chicken breast. With the acidity from Ashlea’s pickled red onions, the tender flavorful chicken, lettuce, scallions, avocado, brown rice, and beautifully smoked lime tahini dressing, this meal will definitely be placed on rotation. Oh my goodness, I am in LOVE with this recipe! There are so many fun flavors in the meat and the dressing! I mixed the dressing into EVERYTHING it was so good! I’m usually not a huge fan of the taste of meat, but the marinade in this made it taste soo good! I ended up leaving out the cilantro from the dressing (because the hubby is not a fan) but thought it still tasted amazing! The best part was adding all the greens I’ve been trying to use up from my fridge—it feels so good when you know you’re eating healthy!
