Prep the Shrimp: Add the coconut sugar, lime zest, chipotle powder, paprika, cumin, salt and pepper to a small bowl and stir until well combined. Pat the shrimp dry and then add to a mixing bowl. Sprinkle the seasoning blend over the shrimp and toss until the shrimp are well coated.
Cook the Shrimp: Heat a large skillet over medium heat. Once hot, add the olive oil to the pan and then add the seasoned shrimp. Cook for 2-3 minutes on each side until the shrimp is opaque and pink around the edges.
Assemble the Bowls: Start with a bed of rice and then top with the shrimp, black beans, shredded lettuce, avocado, pico, sour cream, etc.
