When I need to get dinner on the table quick, these 20 minute Shrimp Burrito Bowls are what I turn to! I start with my special homemade (and easy to make!) shrimp spice blend that coats each tender piece of perfectly cooked shrimp. Then I build my bowl with cilantro lime rice and a variety of fresh toppings. These hearty bowls really do come together in 20 minutes and, because they’re so is easy to customize, they’re a great option for the entire family!

For the Shrimp
- 1 pound shrimp, peeled and deveined
- 1 teaspoon coconut sugar
- 1 teaspoon lime zest
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- salt and pepper
- 1 tablespoon olive oil
- 1 batch cilantro lime rice
- shredded romaine lettuce
- avocado
- pico de gallo
- sour cream or Greek yogurt
- sliced radish
- fresh cilantro
Instructions
- Prep the Shrimp: Add the coconut sugar, lime zest, chipotle powder, paprika, cumin, salt and pepper to a small bowl and stir until well combined. Pat the shrimp dry and then add to a mixing bowl. Sprinkle the seasoning blend over the shrimp and toss until the shrimp are well coated.
- Cook the Shrimp: Heat a large skillet over medium heat. Once hot, add the olive oil to the pan and then add the seasoned shrimp. Cook for 2-3 minutes on each side until the shrimp is opaque and pink around the edges.
- Assemble the Bowls: Start with a bed of rice and then top with the shrimp, black beans, shredded lettuce, avocado, pico, sour cream, etc.
