How to Make Honey Chipotle Chicken Bowls

Step One: Add all of the chicken marinade ingredients to a small bowl and whisk together until well combined. Add the chicken and let it marinade for thirty minutes or up to overnight.

Step Two: After the chicken has marinated, discard the excess liquid. Heat a large skillet over medium-high heat. When the skillet is hot, add one tablespoon of oil to the pan. Next add the chicken to the skillet and cook for 3-4 minutes on each side until the chicken is browned and fully cooked through. Remove the chicken from the pan and set aside. Be careful not to overcrowd the skillet when cooking the chicken to ensure it browns. You may need to cook the chicken in batches.

Step Three: Add all of the dressing ingredients to a high powered blender of food processor. Blend until smooth and creamy.

Step Four: Assemble your bowls. First start with your grain, then add the chicken, and finally your toppings. Drizzle the lime tahini dressing over everything and enjoy!

Smoky and Delicious Spicy Lime Tahini Dressing

One of the best parts of these bowls is the perfect spicy lime tahini dressing. Trust me, this stuff is delicious and not only works perfectly on this bowl but also as a go-to salad dressing.

What You Need:

  • Tahini
  • Chipotle peppers in adobo
  • Fresh garlic
  • Green onion
  • Cilantro
  • Olive oil
  • Salt and pepper
  • Orange juice
  • Lime juice

To make: add all of the ingredients to a food processor or blender and then blending or processing until smooth and creamy. The dressing makes more than enough so you’ll have plenty to drizzle on your bowls or salads all week long.

Store this tahini dressing in the fridge and, because it includes tahini, it will likely thicken up as it chills. If you need to thin the dressing out a bit just add a little bit of water until it reaches the desired consistency.

Tips for Perfect Juicy Chicken

The key to this flavorful bowl is the honey chipotle chicken. Whether you make these exact bowls or not, keeping a flavorful protein on hand like this honey chipotle chicken is a great idea. You can easily use it whip up a quick lunch or dinner when you are running short on time!

Here are a few tips for the best juicy chicken:

  • If you are making this recipe for meal prep you can marinate your chicken Saturday night and then cook it for the week on Sunday. This gives the chicken enough time to sit in the marinade.
  • Use a heavy bottomed (like cast iron) or a non-stick skillet. If you are using a cast iron skillet, don’t skimp on the oil to ensure that the chicken does not stick.
  • If the chicken breast is extra thick, use a sharp knife and split it in half to help it cook more evenly. This will help ensure that the chicken is tender and juicy all the way through and not overcooked in some areas while undercooked in others.

Toppings to Load Up Your Bowl

What I personally love about these chicken bowls is how customizable they are. Once you have the chicken prepared it’s just a matter of building your bowl with all your favorite toppings or whatever you have in the fridge at the time. Here are a few of personal favorite toppings to include in my bowls:

How to Store

Store the honey chipotle chicken and grains separately in the fridge for 3-5 days. When you’re ready just assemble the bowls with all of your favorite toppings.

  1. Hi! Any suggestions for a different dressing? We have a sesame allergy in our house and can’t use tahini.

    1. Ashlea Carver says:

Hi, Mia! any dressing will really work here! I have a jalapeño ranch on my site that would be great!

  2. This recipe is by far one of our all time favorites – we make a double batch of this salad dressing every couple of weeks and always have the ingredients on hand. It’s truly our go-to salad/meal! We are vegetarian so we’ve never made it with the chicken, but we have used the marinade ingredients with tofu and it’s turned out great (also we’ve skipped that part completely sometimes for simplicity and it also is still delicious). We’ve also hard boiled eggs and sliced them and added to the top – also delicious with it! I feel like this is one of the best salad recipes out there.

  3. We love this chicken marinade! Such a delicious addition to our dinner rotation

  4. Chicken was spot on! Absolutely delicious.

I am not a fan on tahini so cannot comment on the dressing!

  5. Absolutely delicious. I substituted tempeh for the chicken for a meat-free meal. I marinated the tempeh overnight and baked at 350 for 20 minutes. So flavorful! Thanks, Ashley!

2 Questions – how long can the dressing last in the fridge and is it okay to freeze the chicken if you didn’t use all of it?

    1. Natalie Perkins (ATHT) says:

Hi Julie! The dressing will last 5-7 Days in an air-tight container in the fridge. For the chicken, if you haven’t cooked it all, it will be okay to freeze, but the texture may change after reheating, Thanks for your question!
