  • Tender and juicy honey chipotle chicken that has been marinated overnight and cooked to perfection.
  • Lots of fresh veggies. I’m talking pickled onions, avocado, crunchy cabbage…all the good things.
  • A spicy lime tahini dressing made with chipotle peppers, plenty of fresh lime juice, and lots of fresh herbs.

Honey Chipotle Chicken:the delicious honey chipotle chicken is the star of the show in these bowls. 

Grains: you can choose whatever grains you like for this bowl. I love to use brown rice, cilantro lime rice, or quinoa. 

Spicy Lime Tahini Dressing: you’ll want to drizzle this on every single thing.

How to Make Honey Chipotle Chicken Bowls

Step One: Add all of the chicken marinade ingredients to a small bowl and whisk together until well combined. Add the chicken and let it marinade for thirty minutes or up to overnight.

Step Two: After the chicken has marinated, discard the excess liquid. Heat a large skillet over medium-high heat. When the skillet is hot, add one tablespoon of oil to the pan. Next add the chicken to the skillet and cook for 3-4 minutes on each side until the chicken is browned and fully cooked through. Remove the chicken from the pan and set aside. Be careful not to overcrowd the skillet when cooking the chicken to ensure it browns. You may need to cook the chicken in batches. 

Step Three: Add all of the dressing ingredients to a high powered blender of food processor. Blend until smooth and creamy.

Step Four: Assemble your bowls. First start with your grain, then add the chicken, and finally your toppings. Drizzle the lime tahini dressing over everything and enjoy!

One of the best parts of these bowls is the perfect spicy lime tahini dressing. Trust me, this stuff is delicious and not only works perfectly on this bowl but also as a go-to salad dressing.

What You Need: 

  • Tahini
  • Chipotle peppers in adobo
  • Fresh garlic
  • Green onion
  • Cilantro
  • Olive oil
  • Salt and pepper
  • Orange juice
  • Lime juice

To make: add all of the ingredients to a food processor or blender and then blending or processing until smooth and creamy. The dressing makes more than enough so you’ll have plenty to drizzle on your bowls or salads all week long.

Store this tahini dressing in the fridge and, because it includes tahini, it will likely thicken up as it chills. If you need to thin the dressing out a bit just add a little bit of water until it reaches the desired consistency.

  • If you are making this recipe for meal prep you can marinate your chicken Saturday night and then cook it for the week on Sunday. This gives the chicken enough time to sit in the marinade. 
  • Use a heavy bottomed (like cast iron) or a non-stick skillet. If you are using a cast iron skillet, don’t skimp on the oil to ensure that the chicken does not stick.

Ingredients

  • 1 pound chicken breast, cut into pieces
  • 1 tbsp avocado or coconut oil

For the chicken marinade

  • ¼ cup lime juice
  • ¼ cup orange juice
  • ½  tsp chipotle powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tsp salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp honey

For the Dressing 

  • ½ cup tahini
  • 3 chipotle peppers in adobo
  • 2 cloves garlic
  • ¼ cup green onion
  • ¼ cup cilantro
  • ¼ cup olive oil
  • 1 tsp salt
  • ¼ cup water
  • ¼ cup orange juice
  • 1/4 cup lime juice

Bowl Toppings

  • Brown or white rice or quinoa
  • Romaine lettuce
  • Cilantro
  • Pickled onions
  • Avocado
  • Tomatoes
  • Carrots

  5. This sauce is amazing, and I’ll be making by again! I didn’t have the forethought to marinate chicken, so I just made this recipe with ground turkey and added all the marinade recipes as I cooked the meat to season it. Still really good, but the sauce is what makes it.

    PS If you’re doubling or tripling the recipe for the chicken and marinade, i’d still stick with the same amount for the dressing. Plenty of dressing to go around.

    I followed the recipe to a T, the only modification I made was to use only 1 tbsp of honey in my chicken marinade versus 2, and the flavor was still perfect for my taste buds.
