The Best Pumpkin Oatmeal Bars

Y’all loved my peanut butter banana oatmeal bars so much that I knew I had to create pumpkin version for pumpkin season and they came out SO GOOD. They’re filled pure pumpkin, pumpkin spice, sweetened with maple syrup and there’s a generous amount of dark chocolate chips added at the end for the perfect chocolatey finish.

These bars are such a great option for a snack or dessert and they come together in one bowl in just a few minutes! Literally a perfect pumpkin recipe if I do say so myself.

Recipe Ingredients

Pumpkin Puree: you can buy your favorite store bought brand or make your own homemade pumpkin puree. If you’re buying canned pumpkin make sure it’s pure pumpkin and not pumpkin pie filling. 

Almond Butter: this helps to create the base of the oatmeal bar batter.

Eggs: you’ll need two large eggs to hold the bars together.

Maple Syrup: adds just the right touch of sweetness.

Vanilla Extract: I mean at this point do I even need to say it?…measure the vanilla with your heart! 

Pumpkin Pie Spice: this helps to create that classic pumpkin pie spice you love. If you’re out, you can use my recipe to make your own homemade pumpkin pie spice.

Baking Powder: this helps the bars rise as they bake. 

Oats: the base of this recipe! Old-fashioned oats work best. Use certified gluten free oats if you need to ensure that these bars are completely gluten free. 

Chocolate Chips: feel free to use regular-sized or mini chocolate chips. I love dark chocolate, but milk chocolate will also work.

Ways to Customize

The great thing about this recipe is that it’s super easy customize. So, feel free to mix and match different ingredients to make this recipe your own. Here are a few options: 

  1. Adding chopped nuts – Fold in a handful or more of chopped almonds, pecans, or walnuts. 
  2. Leaving out the chocolate – Not a huge chocolate lover? Feel free to leave the chocolate chips out of these bars. 
  3. Adding dried fruit – Skipping the chocolate? Use dried fruit instead!

How to Make Healthy Pumpkin Oatmeal Bars

Step 1: Preheat your oven to 350 degrees, and line an 8×8 baking dish with parchment paper. 

Step 2: Stir the pumpkin puree, almond butter, eggs, maple syrup, and vanilla extract in a bowl until well combined. 

Step 3: Stir in the pumpkin pie spice, baking powder, salt, and oats until well combined. Then, gently fold in part of the chocolate chips. 

Step 4: Transfer the batter to the parchment paper-lined baking dish, spreading it out evenly. Next, sprinkle the remaining chocolate chips on top, using your fingers to lightly press them into the top of the batter. 

Step 5: Bake the pumpkin oatmeal bars for 35 to 30 minutes or until they are set and a toothpick comes out clean when inserted into the middle. Top the bars with flaky sea salt as soon as they come out of the oven. 

Step 6: Allow the bars to cool in the pan completely. Then, slice them into 9 squares, and enjoy!

Baking Tips

Use parchment paper. Grease the pan a bit before adding the parchment paper to help the parchment paper stick to the bottom of the pan so it won’t slip around while you pour in the batter.

Let the bars cool a bit before slicing. It will be super tempting to cut these bars as soon as they come out the oven but let them cool for just a bit before slicing.

Store the bars in the fridge. There is a good chance that these bars will not even last that long, but just in case you have any leftovers, store them in the fridge for safe keeping.

How to Store 

  1. Store leftover bars in an airtight container at room temperature for up to 3 days or in the fridge for up to 10 days. 
  2. Freeze your oatmeal pumpkin bars for up to 3 months. To do so, allow them to cool completely, slice them, and transfer them to an airtight container, placing a sheet of parchment paper between each layer to prevent them from clumping together. Thaw overnight in the fridge and then reheat in a warm oven.

  • 1 cup pumpkin puree
  • 1 cup creamy all-natural almond butter
  • 2 large eggs, whisked
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups old-fashioned oats
  • 3/4 cup chocolate chips (plus 1/4 cup for top)
  • flaky sea salt, for topping

Instructions

  1. Preheat oven to 350 degrees. Line an 8×8 baking dish with parchment paper.
  2. Stir together the pumpkin puree, almond butter, eggs, maple syrup, and vanilla extract until well combined.
  3. Next, stir in the pumpkin pie spice, baking powder, salt, and oats until well combined. Then, fold in the chocolate chips.

  5. Bake the bars at 350 degrees for 25-30 minutes or until set and a skewer comes out clean when inserted into the middle. Top the bars with a bit of flaky sea salt when they come out of the oven.
  6. Let the bars completely before slicing into 9 squares. Enjoy!

    I have 2 lg roasted sweet potatoes I did not use for Thanksgiving. Im going to swap the pumpkin w/ sweet potatoes and swap the pumpkin pie spices w/ cardamom/nutmeg/cinnamon spices. Wish me luck!
