Ingredients

Cucumber: I recommend using English or seedless cucumber for this recipe. They tend to have thinner skin and a less bitter flavor than traditional cucumbers.

Avocado: adds a bit of creaminess and healthy fats. 

Red Onion: you’ll need half a red onion for this recipe. It adds some bold flavor and extra crunch. If needed, you can rinse the onion under cold water after you have diced it to relieve some of the “bite” that’s usually associated with raw onion.

Feta Cheese: the creamy feta adds a salty, tangy bite that brings the salad to life.

Fresh Herbs: chopped parsley and dill add the perfect touch of flavor to the salad.

Olive Oil: this forms the base of the dressing. Choose a great tasting olive oil that you love. 

Lemon Juice: this adds a bit of extra brightness and to the salad and helps keep the avocado from turning brown. Freshly squeezed is best! 

Red Wine Vinegar: this is my go-to wine for salad dressings and adds a tangy taste.  

Garlic: you’ll need at least one garlic clove for this recipe, but feel free to add more if you prefer a stronger garlic flavor. 

Seasonings: dried oregano, salt, and pepper.

Recipe Variations

  • Add extra veggies – this salad is so easy to customize! Feel free to include any veggies you like best or have on hand. Some of my favorite additions include tomatoes, chopped celery, bell pepper, or artichoke hearts. 
  • Add protein – pair this salad with grilled chicken, shrimp, or steak bites for a complete meal. Or, keep it plant-based with chickpeas or tofu. 
  • Add extra flavor – incorporate herbs and seasonings like mint, parsley, cumin, or capers. 
  • Swap the dressing – substitute any store-bought or homemade dressing you like best. Greek salad dressingtahini Caesar dressing, or lemon herb tahini dressing all make great options.

How to Make This Cucumber and Feta Salad

Step One: Add the cucumbers, avocado, feta cheese, red onion, and parsley to a large mixing bowl. 

Step Two: Add the dressing ingredients to a small bowl, and whisk to combine. 

Step Three: Pour the dressing over the salad ingredients. Then, use a spoon to gently mix until everything is combined and coated with the dressing. 

Step Four: Adjust the seasonings to taste, and enjoy!

Meal Prep Tips

  1. Make the dressing: prepare the dressing in advance, and store it in the fridge in an airtight container.  
  2. Chop and store your veggies: make throwing your salad together extra easy by chopping your veggies in advance, and storing them in separate airtight containers in the fridge. 
  3. Assemble the salad but leave off the dressing: you can easily assemble the salad a day in advance. Leave off the dressing until right before you are ready to serve. Then, toss the ingredients to combine. 

How to Store 

Store any leftover salad in an air-tight container in the fridge for 1 to 2 days.

Ingredients

Scale
  • 1 long English cucumber, sliced into half moons (roughly 4 cups)
  • 1 small avocado, diced
  • 1/2 red onion, thinly sliced
  • 4 oz feta cheese, crumbled
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped fresh dill

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, finely minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. To a mixing bowl add the cucumbers, avocado, feta cheese, red onion, and parsley.
  2. Add the dressing ingredients to a small mixing bowl and whisk together until well combined.
  3. Pour the dressing over the salad ingredients. Use a spoon to gently mix until everything is well coated in the dressing.
  4. Give the salad a taste and adjust the seasoning as needed. Serve and enjoy!
