- Broccoli: you can buy a few crowns of broccoli for this recipe or pre-cut florets. Just make sure to cut the florets into bite-sized pieces, and use fresh broccoli. Frozen broccoli will be too soft.
- Feta: crumbled feta adds a creamy texture and a salty, tangy bite.
- Cooked Bacon: this adds texture and delicious richness. You can cook the bacon in the oven or on the stovetop. Just be sure to drain it before using.
- Pistachios: these add a rich, nutty flavor and extra crunch.

How to Make Creamy Feta Broccoli Salad
- Make the dressing. Whisk all the dressing ingredients except the water in a small bowl. Then, slowly whisk in the water until the dressing is smooth and creamy.
- Combine the salad ingredients. Add the broccoli, feta, bacon, pistachios, red onion, and dates to a large bowl.
- Toss the salad. Pour the dressing over the salad, and toss to combine and coat the ingredients.
- Serve. Season with salt and pepper to taste, add more crumbled feta, and enjoy!

Ways to Serve
For a complete spread, add fruit salad, sweet and tangy apple slaw, loaded baked potato salad, and slow cooker baked beans, too!

How to Store
Leftovers will keep fresh in an airtight container in the fridge for 3-4 days. Just give it a quick stir to redistribute the ingredients before serving.
I don’t recommend freezing this recipe! The salad becomes soggy, and the dressing tends to separate once thawed.

Ingredients
- 24oz broccoli florets, chopped into bite-sized pieces
- 4oz feta cheese, crumbled
- 4 slices cooked bacon, chopped
- 1/2 cup roasted pistachios, chopped
- 1/2 cup thinly sliced red onion
- 12 medjool dates, chopped
For the Creamy Tahini Dressing
- 1/4 cup tahini
- 1/4 cup olive oil
- 1/4 cup honey
- 1/4 cup lemon juice
- 1 teaspoon kosher salt
- pepper to taste
- 1/3 cup water
Instructions
- Make the Dressing: Add all of the dressing ingredients, except the water, to a small mixing bowl and whisk until well combined. Next, slowly whisk in the water until smooth and creamy.
- Add the broccoli, feta, bacon, pistachios, red onion, and dates to a large mixing bowl.
- Pour the dressing over the salad ingredients and toss until everything is well combined.
- Season with additional salt and pepper to taste and finish with more crumbled feta. Enjoy!
