When it comes to creating quick and easy meals, shrimp is one of my go-to protein sources! Not only does it cook in minutes, but shrimp pairs well with a variety of spices and seasonings which make them incredibly versatile.

If you also love shrimp then you’re going to love this Cilantro Lime Shrimp recipe packed with plenty of bright citrus, fresh herbs, and a bit of butter for the best flavor. You can serve the shrimp as a light meal with your favorite sides or on top of a salad or in lettuce wraps. Recipe Ingredients

Shrimp: you’ll need two pounds of jumbo shrimp. Make sure to peel and devein them before you begin cooking! 

Lime juice and zest: the best seafood recipes contain a touch of citrus, and this cilantro lime shrimp recipe is no exception!

Seasonings: you’ll need chipotle powder, paprika, cumin, onion powder, salt, and pepper. 

Butter: use this to form the base of the sauce. I highly recommend using a pasture-raised butter like Kerrygold, because it will have more flavor.

Scallions and garlic: for even more flavor.

Cilantro: last but certainly not least!

How to Make Cilantro Lime Shrimp

Step One: Pat the shrimp dry with paper towels. Then, season them with the lime zest and spices. 

Step Two: Heat a large pan over medium-high heat, and add the oil. 

Step Three: Add the shrimp to the pan, and cook for 2 to 3 minutes on each side. Remove the shrimp from the pan. 

Step Four: Add the butter to the same pan, and swirl it around until melted. Next, add the scallion and garlic, and cook for 30 seconds to 1 minute or until fragrant. Lastly, add the lime juice, and stir to combine. 

Step Five: Remove the pan from the heat, and add the shrimp along with the cilantro. Toss until well combined. 

Can I Grill the Shrimp? 

Yes! Season the shrimp with lime zest, seasonings, and oil and then place them on skewers. If you’re using wooden skewers don’t forget to soak them! Next place the shrimp on a heated grill. The shrimp will only need a minute or two of cooking time on each side.

Serving Suggestions

I love to serve the shrimp over a bowl of cilantro lime rice with toppings like black beans and guacamole. However, you can also use it to create: 

  • Tacos and Quesadillas: start with your favorite tortillas. Then, add cheese and beans, or pile on your favorite toppings.
  • Salads: for a lighter option, start with a base of greens. Then, add the shrimp and other toppings, and toss the ingredients with your favorite salad dressing like this homemade jalapeño ranch
  • Lettuce Wraps: fold your shrimp in butter or romaine lettuce leaves.

How to Store and Reheat

This recipe is best served right away while the shrimp are warm. However, leftovers can be transferred to an airtight container and stored in the fridge for up to 3 days. 

Reheat your cilantro lime shrimp in a skillet over medium heat or in the microwave. Or, enjoy them cold!

Ingredients

Scale
  • 2 pounds jumbo shrimp, peeled and deveined
  • 1 teaspoon lime zest
  • 1 teaspoon chipotle powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt 
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil

Garlic Butter Sauce

  • 3 tablespoons unsalted butter
  • 2 tablespoons thinly sliced scallions
  • 4 cloves garlic, minced 
  • 1/4 cup lime juice
  • 1/3 cup chopped cilantro 

Instructions

  1. Pat the shrimp dry with paper towels and then season with lime zest and spices. 
  2. Heat a large pan over medium-high heat. Once hot, add the olive oil.
  3. Add the shrimp to the pan. Cook for 2-3 minutes on each side. 
  4. Remove the shrimp from the pan and turn the heat to medium low. Next, add the butter to the pan and swirl until melted. Next, add the scallion and garlic and cook for 30 seconds to 1 minute until fragrant. Lastly, add the lime juice and stir until well combined. 
  5. Remove the pan from the heat and add the shrimp back to the pan along with the cilantro. Toss until well combined.
