There’s just something about shrimp on salads, can we agree? Especially in the warmer summer months when we’re all craving those light and fresh fruits and veggies, seafood is the perfect addition to and crisp green salad. Shrimp in particular pairs perfectly with a combination of both sweet and spicy flavors which is why this chili lime shrimp salad with sweet and spicy guacamole works so well. It’s like a flavor explosion in your mouth and I think we can all get on board with that. Correct?
If you haven’t been adding shrimp to your salads, here’s your reminder to grab some the next time you’re at the grocery store and make this salad. Here are a couple of reasons I love cooking with shrimp:
it’s QUICK. It’ll take you all of three minutes to make the shrimp for this salad
it’s packed with protein
it’s versatile. You can season and cook shrimp in so many different ways and it goes perfectly with ingredients that have a touch of sweetness like this Good Foods Sweet & Spicy Guacamole
While this salad may look a little “involved” it’s actually really simple. The ingredients list isn’t a mile long, and you likely have everything you need to make this recipe in your fridge. To whip up this easy chili lime shrimp salad you’ll need:
a few simple seasonings (cumin, paprika, chili powder, salt, pepper)
and last but certainly not least Good Foods Sweet & Spicy Guacamole to tie it all together
While this salad is made with super simple ingredients, the key to making sure it’s delicious is not to overcook the shrimp. As soon as it turns translucent you want to remove the shrimp from the pan because it’s done. Three to four minutes on medium high heat is really all you need to get the perfect shrimp every single time. Trust me!
If you want to take this salad to the next level and make it even more filling, you can add a side of fried plantains like I did in these photos. White rice or cauliflower rice, if you want to keep this Whole30, would also work really well in this salad. We’re a huge fan fried plantain strips on the side, but honestly this salad is definitely hearty and filling all on it’s own!
While the shrimp is one of the stars in this salad show, the Good Foods Sweet and Spicy Guacamole is really what ties everything together. Good Foods specializes in products that contain no chemicals, no preservatives, no additives, and no artificial ingredients, colors, or flavors. Their Sweet and Spicy Guacamole is no different and made with only real food ingredients that you can actually pronounce, which I love.
This Sweet and Spicy Guacamole is made with the classic guacamole ingredients like hass avocados, red onions, jalapeño, and cilantro, but also has a bit of fresh pineapple for sweetness, and roasted poblano peppers for spice. This guacamole works so well in salads with seafood or chicken and it’s also the perfect dip for your favorite chip. It’s versatile and brings a fun new twist on the classic guacamole flavor.
