Especially in the warmer summer months when we’re all craving those light and fresh fruits and veggies, seafood is the perfect addition to and crisp green salad. Shrimp in particular pairs perfectly with a combination of both sweet and spicy flavors which is why this chili lime shrimp salad with sweet and spicy guacamole works so well. It’s like a flavor explosion in your mouth and I think we can all get on board with that. Correct?

While this salad may look a little “involved” it’s actually really simple. The ingredients list isn’t a mile long, and you likely have everything you need to make this recipe in your fridge. To whip up this easy chili lime shrimp salad you’ll need:

While this salad is made with super simple ingredients, the key to making sure it’s delicious is not to overcook the shrimp. As soon as it turns translucent you want to remove the shrimp from the pan because it’s done. Three to four minutes on medium high heat is really all you need to get the perfect shrimp every single time. Trust me!
If you want to take this salad to the next level and make it even more filling, you can add a side of fried plantains like I did in these photos. White rice or cauliflower rice, if you want to keep this Whole30, would also work really well in this salad. We’re a huge fan fried plantain strips on the side, but honestly this salad is definitely hearty and filling all on it’s own!

Chili Lime Shrimp Salad with Sweet & Spicy Guacamole
Ingredients
For the Salad:

8 oz raw shrimp

1/2 tbsp avocado oil

paprika

cumin

chili powder

Instructions:

Heat a skillet over medium high heat. Season the shrimp with a few shakes of garlic powder, cumin, chili powder, paprika, salt, pepper. When the skillet is hot, add in the avocado oil. Next, add the shrimp and cook for 1-2 minutes on each side until the shrimp is transparent and cooked through. When the shrimp is done cooking, finish with a generous squeeze of fresh lime juice and set aside.
