These Chipotle Chicken Sandwiches have quickly become a staple weeknight dinner around here and I’m so excited to share them with you. One way I know a recipe is truly a hit is when I can’t stop making it myself and I think I’ve made these sandwiches 1000 times at this point.
The chicken is juicy and flavorful, the sweet and tangy honey mustard sauce pairs so well with the chipotle flavor, and the toasted brioche buns are just perfect. Not only are these sandwiches delicious, they’re also surprisingly easy to make and a great weeknight dinner option.

Chipotle Chicken Sandwich Ingredients
Chicken Breast: you’ll need two large chicken breasts for this recipe. To prep the chicken breast for sandwiches, you’ll split them in half lengthwise. Splitting the chicken breast in half helps to make them an even thickness so that they cook evenly.
Spices: the combination of dried herbs and spices are what give these chicken sandwiches so much flavor. You’ll need a combination of garlic powder, onion powder, paprika, chipotle powder, and dried dill.
Cheddar Cheese: extra sharp cheddar cheese is my cheese of choice for these sandwiches.
Brioche Buns: toasted, buttery brioche buns are the perfect way to serve these sandwiches.
Ingredient Substitutions
- Chicken Breast – don’t feel like taking the time to split the chicken breast in half? you can use chicken breast cutlets instead which are a bit thinner and perfect for this recipe. You could also swap the chicken breast for boneless, skinless chicken thighs instead.
- Cheese – feel free to swap the cheddar cheese out for whatever cheese you prefer in this recipe. Pepper jack, Monterrey, or Colby jack would all be great options.
- Buns – need to keep this recipe gluten free? swap out the brioche buns for your favorite gluten free bun instead!

Homemade Honey Mustard Sauce
What helps make these sandwiches even more delicious is the addition of a homemade honey mustard sauce. The heat of the chipotle seasoning plus the sweet of the honey mustard sauce pairs perfectly together. Here’s what you need to make the honey mustard sauce:
- mayonnaise
- dijon mustard
- yellow mustard
- honey
- apple cider vinegar
- paprika
- garlic powder
- onion powder
How To Make a Chicken Sandwich
Step One: each chicken breast in half lengthwise and then add to a mixing bowl. Add the salt, pepper, and spices to the chicken and then toss until the chicken breasts are well coated in spices.
Step Two: Add all of the ingredients to medium mixing bowl and then whisk until well combined and smooth. Set aside.
Step Three: Heat a large skillet over medium-high heat. Once hot, add the olive oil to the pan and then add the chicken. Cook the chicken for 4-6 minutes per side until golden brown and the internal temperature reaches 165 degrees Fahrenheit. When the chicken is fully cooked, remove the pan from the heat and add 1 slice of cheddar cheese to the top of each chicken breast. You can cover the pan with a lid to help the cheese melt a bit.
Step Four: Remove the chicken breasts from the pan and assemble your burgers on toasted brioche buns with all the toppings.

Meal Prep Tips
- Prep the chicken – prep and season the chicken up to two days in advance to help save yourself some time. You can also prep and season a big batch of the chicken breast in advance and then freeze.
- Prep the toppings – you can slice and prep your toppings in advance so that they’re ready to use when you make your sandwiches.
Best Way to Store and Reheat
Store any leftover cooked chicken in an air-tight storage container in the fridge for up to three days.
When you’re ready, you can reheat in the chicken in the microwave for thirty seconds at a time until the chicken is warmed through and then assemble a sandwich.
