Description

These juicy and delicious Chipotle Chicken Sandwiches are surprisingly easy to make, packed with flavor, and the perfect way to get your chicken sandwich fix at home.


Ingredients

Scale
  • 2 large (6-8 ounce) boneless skinless chicken breast
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon dried dill
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese

Honey Mustard Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 1 tablespoon yellow mustard
  • 3 tablespoons honey
  • 1/2 tablespoon apple cider vinegar
  • 1 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

For Serving

  • honey mustard sauce
  • 4 brioche buns, toasted
  • romaine lettuce leaves
  • tomato slices
  • thinly sliced red onion
  • pickles

Instructions

  1. Prep the chicken: slice each chicken breast in half lengthwise and then add to a mixing bowl. Add the salt, pepper, and spices to the chicken and then toss until the chicken breasts are well coated in spices.
  2. Make the honey mustard sauce: Add all of the ingredients to medium mixing bowl and then whisk until well combined and smooth. Set aside.
  3. Cook the chicken: Heat a large skillet over medium-high heat. Once hot, add the olive oil to the pan and then add the chicken. Cook the chicken for 4-6 minutes per side until golden brown and the internal temperature reaches 165 degrees Fahrenheit. When the chicken is fully cooked, remove the pan from the heat and add 1 slice of cheddar cheese to the top of each chicken breast. You can cover the pan with a lid to help the cheese melt a bit.
  4. Assemble the sandwiches: Remove the chicken breasts from the pan and assemble your burgers on toasted brioche buns with all the toppings.
