I am a big fan of salads with loads fresh fruit. I’ve you’ve never tried adding fruit to your salad, I can guarantee that you’re missing out on some deliciousness. Fruit adds a little natural sweetness and extra flavor to your salad and can make them a bit more hearty and interesting. This Berry Chicken Salad with Honey Lime Vinaigrette is one of my favorite salad recipes that really makes fresh fruit the star of the show.
The summer is such a great time to utilize all of the fresh fruit that’s available either as an extra topping on your salads or as the base of the salad itself like in this recipe for Watermelon, Feta, Cucumber, and Mint Salad.
The combo of watermelon and feta cheese may sound a little unconventional but it’s really delicious. It’s the perfect balance of sweet from the watermelon and salty from the creamy feta cheese. The addition of the fresh mint, cool cucumber, and a fresh squeeze of lime juice add even more flavor. Everything just works so well together.
Not only is this fresh watermelon salad delicious, it’s also incredibly easy to make. It’s a one-bowl kind of dish that’s perfect for entertaining or feeding a crowd. While it’s refreshing all on it’s own, it makes a great cool side dish with meats fresh off the grill!
This easy watermelon salad is incredibly flavorful but don’t worry, it’s still made with just a few simple ingredients that you can find at your local grocery store. Here’s what you’ll need to make this refreshing summer dish:
juicy diced watermelon
salty crumbled feta cheese
cool crunchy cucumber
a squeeze of fresh lime juice
thinly sliced red onion for garnish
salt & pepper
Once you have all of your ingredients, making this dish is really as simple as adding everything to a mixing bowl. For the best results, I like to mix all of my ingredients, minus the feta cheese and red onion, until well combined and then crumble on the feta and garnish with red onion. The thinly sliced red onion is completely optional as a garnish, but I think it adds a little bit of extra flavor that works really well here. The trick is just to slice it pretty thin so you don’t get huge hunks of red onion in your salad.

Thai Crunch Salad with Creamy Peanut Dressing [gluten-free, vegan, dairy-free]
2 cups diced seedless watermelon
1/2 cup diced seedless cucumber
1/3 cup crumbled feta cheese
1/4 cup mint leaves, shredded
juice of 1 lime
salt and pepper to taste
thinly sliced red onion for garnish, optional
Add all of the ingredients, except the feta cheese, to a large mixing bowl and toss to combine.
When you’re ready to serve, sprinkle the crumbled feta cheese on top and enjoy!
