The summer is such a great time to utilize the abundance of fresh fruit that’s available, either as an extra topping or addition to your salads, or as the base of the salad itself.

This watermelon and feta salad has the perfect of sweet from fresh watermelon and salty from creamy feta cheese. While the  combination of watermelon and feta cheese may sound a little unconventional it really is delicious.

The addition of the fresh mint, cool cucumber, and a fresh squeeze of lime juice adds even more flavor. I know you will love it!

Salad Ingredients

This easy watermelon salad is incredibly flavorful but don’t worry, it’s still made with just a few simple ingredients that you can find at your local grocery store.

Here’s what you’ll need to make this refreshing summer dish:

Watermelon: to make things easy, I prefer to use a seedless watermelon. Dice it up into small chunks for this salad.

Cucumber: for this recipe I recommend using an English cucumber. This variety of cucumber has a tender, thinner skin than traditional cucumber and is also seedless.

Red Onion: for the best results, slice your red onion thinly to ensure that you do not get a huge chunk of red onion in a bite of salad.

Feta Cheese: the combination of feta cheese and watermelon is absolutely delicious. The creamy feta adds a salty, tangy bite that brings the salad to life.

Mint: fresh mint pairs perfectly with watermelon.

Lime Juice: this adds a bit of extra brightness and helps to create a thin dressing for the salad.

How to Make This Watermelon Feta Mint Salad

Step One: start by adding the watermelon, cucumber, red onion, mint leaves, lime juice, salt and pepper to a large mixing bowl. Toss everything together until well combined. Refrigerate the salad until you are ready to serve.

Step Two: When you are ready to serve, add the feta cheese and toss gently. Serve the salad and enjoy!

How to Serve?

Not only is this fresh watermelon salad delicious, it’s also incredibly easy to make. It’s a one-bowl kind of dish that’s perfect for entertaining or feeding a crowd. While it’s refreshing all on it’s own, it makes a great cool side dish with meats fresh off the grill!

Variations

  • Add fresh baby arugula. The pepperiness of fresh arugula will pair well with the salad and add in a bit of extra veggies.
  • Switch up the herbs. This salad would be delicious with fresh basil instead of mint.
  • Add a drizzle of balsamic vinegar.

Ingredients

  • 6 cups diced seedless watermelon
  • 1 cup diced seedless English cucumber

  1. RUN, don’t walk to grab ingredients for this recipe! This is my FAVORITE watermelon salad for the 4th (was a big hit last year), and will be making it again this year. So refreshing, and a nice change from the usual watermelon salad with blueberries.






  2. Loved this salad!! I made it as a side dish for my meal prep – made it on a Sunday and lasted beautifully all week – no change in texture and the flavors were great as the week went on. I will make this all summer while our watermelons are delicious!
