Creamy Cucumber Radish Salad

This Cucumber Radish Salad is crisp, creamy, herby, and tangy. Quick to toss together, it’s an easy appetizer or side dish for weeknight meals, picnics, and backyard barbecues! 

The Perfect Fresh, Cool, Crisp Cucumber and Radish Salad 

This is the best summer recipe! The combination of cool cucumber, slightly bitter radish, a yummy Greek yogurt dressing and plenty of fresh herbs cannot be beat. Plus, there’s no cooking involved. Just combine the ingredients, and serve! 

What’s In a Radish Cucumber Salad? 

  1. Greek Yogurt: I prefer to use whole-milk Greek yogurt in this recipe, but you could easily sub it for low-fat or fat-free yogurt! If you need to keep this recipe dairy-free, you can use your favorite dairy-free yogurt instead! 
  2. Garlic: you’ll need at least one garlic clove for the dressing, but you can always add more if you prefer a stronger garlicky taste. 
  3. Lemon Juice: the acidity adds a bright, refreshing taste, balancing some of the richness of the yogurt. 
  4. Red Wine Vinegar: this helps thin the yogurt, creating a pourable dressing and adds a delicious, sweet, tangy taste. 
  5. Fresh Dill: I love fresh dill in a salad! It contains bright, sweet, tangy, almost citrusy notes, adding so much depth to the salad. 
  6. Veggies: English cucumbers, radishes, and green onions form the bulk of the salad. If you can’t find English cucumbers, Persian cucumbers are very similar.

Can I Make This Recipe Ahead of Time? 

Because the cucumber tends to release quite a bit of water as it sits, I prefer to eat this salad fresh on the first day of making it!

Description

This Cucumber Radish Salad is crisp, creamy, herby, and tangy. Quick to toss together, it’s an easy appetizer or side dish for weeknight meals, picnics, and backyard barbecues! 


Ingredients

Units Scale
  • 1/2 cup whole milk Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 3 tablespoons fresh dill
  • 1/4 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • 1 large English cucumber, thinly sliced into rounds
  • 8 radishes, thinly sliced into rounds
  • 1/3 cup green onion, sliced

Instructions

  1. To a small mixing bowl, add the Greek yogurt, garlic, lemon juice, red wine vinegar, salt, and pepper. Whisk together until well combined. 
  2. Next, add the thinly sliced cucumber, sliced radish, dill, and green onion to a mixing bowl. Pour over the dressing and toss the veggies in the dressing gently until well combined. 
  3. Taste the salad and add additional salt and pepper to taste. Enjoy!
