Description

This Cucumber Radish Salad is crisp, creamy, herby, and tangy. Quick to toss together, it’s an easy appetizer or side dish for weeknight meals, picnics, and backyard barbecues! 


Ingredients

  • 1/2 cup whole milk Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 3 tablespoons fresh dill
  • 1/4 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper (plus more to taste)
  • 1 large English cucumber, thinly sliced into rounds
  • 8 radishes, thinly sliced into rounds
  • 1/3 cup green onion, sliced

Instructions

  1. To a small mixing bowl, add the Greek yogurt, garlic, lemon juice, red wine vinegar, salt, and pepper. Whisk together until well combined. 
  2. Next, add the thinly sliced cucumber, sliced radish, dill, and green onion to a mixing bowl. Pour over the dressing and toss the veggies in the dressing gently until well combined. 
  3. Taste the salad and add additional salt and pepper to taste. Enjoy!
