When it comes to easy make-ahead breakfasts, chia seed pudding is always a winner! Not only is it packed with healthy fats and fiber to keep you feeling full, it only takes ten minutes to actually make which is the best when you are running short on time.

There are so many different varieties of chia seed pudding but this chocolate chia seed pudding is something special. This recipe uses a combination of non-dairy milk and almond butter keep things creamy and is sweetened with a touch of pure maple syrup.

Its a simple, yummy recipe that you will definitely want to add into your weekly meal prep routine.

What Is Chia Seed Pudding?

Chia seed pudding is made from combining chia seeds with a liquid, like almond milk or coconut milk, and other tasty ingredients like nut butter or fruit. The chia seeds soak overnight in the liquid and turn into a creamy pudding like texture.

Chia Seeds: Chia seeds are a great source of fiber and have over ten grams in ounce. They are also an excellent source of omega-3 healthy fats which are a great addition to your healthy diet. They are also rich in antioxidants, iron, and calcium.

Almond Butter: For an extra dose of healthy fats and deliciousness.

Almond and Coconut Milk: I love the combination of almond and coconut milk in this recipe. The coconut milk is just a bit creamier than the almond milk and together they provide just the right balance of creaminess.

Cinnamon: Helps to give the chia pudding that classic banana bread flavor.

Vanilla Extract: For just the right touch of delicious vanilla flavor.

Ways to Customize

  • Use a different nut butter – any nut butter will work in this recipe so feel free to get creative! Cashew butter, peanut butter, or even pecan butter would all be wonderful.
  • Use cacao powder – you can swap the cocoa powder for cacao powder if you prefer.
  • Sweeten things up – Feel free to add another tablespoon of honey or maple syrup to your oats if you like them on the sweeter side.
  • Add extra fruit – try adding a handful of strawberries, blueberries, or raspberries to the chia pudding. A handful of shredded coconut would also be delicious!
  • Switch up the milk – instead of almond milk you can switch things up and try using cashew milk or even oat milk.

How to Make Chia Seed Pudding

Step One: Whisk together all of the ingredients except the chia seeds.

Step Two: Add the chia seeds and whisk again until well combined.

Step Three: Pour the mix into a glass storage container and place it in the refrigerator. After a few minutes, give it another stir to make sure everything is evenly combined.

Step Four: Leave the chia pudding in the fridge overnight. In the morning give it a good stir and then top it with fresh berries, your favorite granola, and nut butter.

How Long Does Chia Seed Pudding Last?

Your chia pudding should last for 3-5 days in an air-tight container in the fridge.
