If you haven’t made chia seed pudding yet, what are you waiting for?! But seriously, chia seed pudding is one of my favorite easiest (and quick!!) healthy recipes. It’s perfect for a grab and go breakfast, healthy after-school or after work snack, or healthier treat.
If you’ve never made chia seed pudding before, then it might seem a little foreign to you, but trust me it’s delicious and you give this one a try. This almond butter version is fully of healthy fats, lightly sweetened, and perfectly creamy thanks to the addition of almond butter.
If you’re feeling ambitious, I would highly recommend making a batch of this al to use in your chia seed pudding. Not only does it make this chia seed pudding that much more flavorful, you’ll also have leftover almond butter to use in these delicious recipes:
This creamy almond butter chia seed pudding is a great blank canvas for your favorite fruit (I love fresh berries), granola, and more almond butter. You can even layer the almond butter in the bottom of the jar before placing the chia seed pudding on top. Not only is this chia seed pudding delicious, it’s only made with a few simple ingredients that you may already have in your pantry!
To make this creamy almond butter chia seed pudding you need:
chia seeds
coconut milk
almond milk
maple syrup
vanilla extract
The best thing about this recipe is that you can tweak it a bit to fit the ingredients you may already have. Instead of using two different plant-based milks you could use only almond, coconut, or even cashew milk. Also feel free to leave out the sweetener altogether if you don’t want to include any added sugar or use honey instead of maple syrup. Feel free to make this creamy almond butter chia seed pudding your own!
Five-Ingredient Vanilla Chia Seed Pudding [gluten-free, paleo, vegan]
Banana Bread Chia Seed Pudding [paleo, vegan, gluten-free]
Chocolate Almond Butter Chia Seed Pudding [vegan, paleo, gluten-free]
1/2 cup almond milk
1/2 cup light canned coconut milk
1 tsp vanilla extract
1-2 tbsp maple syrup
1/4 cup almond butter
1/4 cup chia seeds
Whisk together all of the ingredients except the chia seeds
Add the chia seeds and whisk again until well combined.
Pour the mix into a storage container (I love using these canning jars) and place it in the refrigerator. After a few minutes, give it another stir to make sure everything is evenly combined.
Leave the chia pudding in the fridge overnight. In the morning give it a good stir and then top it with berries, nut butter, or your favorite granola. Enjoy!
