Recipe Ingredients
Olive Oil: this helps sauté the ingredients while adding extra flavor.
Sausage: for a delicious smokey flavor, this recipe uses kielbasa smoked link sausage.
Apple Cider Vinegar: this works to deglaze the pan to make sure you get all those lovely flavorful brown bits.
Red Onion: you’ll need half a red onion for this recipe.
Cabbage: this recipe uses 1 small to medium-sized green cabbage or around 8-10 cups of chopped cabbage. I prefer green cabbage in this recipe but you could use red cabbage if you prefer.
Garlic: fresh garlic cloves really are the best option for the most flavorful sausage and cabbage recipe.
Seasonings: this recipe is simply seasoned with red pepper flakes, salt, and black pepper.
Ingredient Swaps
- Olive oil – you could easily swap this for avocado oil, ghee, or even butter if you prefer.
- Sausage – I love to use smoked turkey kielbasa for this recipe. Feel free to use your favorite smoked link sausage. Andouille would be great!
- Red onion – you could easily swap yellow onion for red if you prefer!
How to Make Fried Cabbage and Sausage
Step One: Warm an extra large skillet or braising dish over medium heat. Once hot, add the olive oil.
Step Two: Add the sliced sausage to the skillet, and cook for 4 to 6 minutes or until it is browned on both sides. Then, remove the sausage from the pan.
Step Three: Reduce the heat to medium-low, and pour the apple cider vinegar into the skillet. Deglaze the pan, scraping any brown bits from the bottom.
Step Four: Turn the heat back up to medium-high. Then, add the red onion, and sauté for 30 seconds or up to 1 minute to soften.
Step Five: Next, add the sliced cabbage and garlic to the pan. Sauté the ingredients for 3 to 5 minutes or until the cabbage begins to cook down.
Step Six: Add the sausage back to the pan along with the red pepper flakes, salt, and black pepper. Continue to cook for 2 to 4 minutes or until the cabbage has browned and wilted. It should be tender but still slightly crisp!
Step Seven: Adjust the seasonings to taste, and serve warm!

This Sausage and Cabbage skillet is a healthier take on traditional fried cabbage and sausage! Made with less than ten ingredients and a single skillet, it’s the perfect quick weeknight dinner for any day of the week.
Ingredients
- 1 tablespoon olive oil
- 12 oz kielbasa smoked sausage, sliced
- 2 tablespoons apple cider vinegar
- 1/2 large red onion, sliced
- 1 small to medium green cabbage, cored and sliced (8–10 cups)
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat an extra large skillet or braising dish over medium high heat. Once hot add olive oil.
- Add the sliced sausage and cook for 4-6 minutes until browned on each side. Remove from the pan.
- Lower the heat to medium low and add in the apple cider vinegar to deglaze the pan, scraping any brown bits from the bottom of the pan.
- Turn the heat back to medium high and then add the red onion and sauté for 30 seconds to 1 minute.
- Next, add the sliced cabbage and garlic to the pan. Sauté for 3-5 minutes until the cabbage begins to cook down in the pan.
