Refreshing Watermelon Mint Mojito Mocktail

Few things are better than a refreshing drink on a hot day and this watermelon mojito mocktail is about as refreshing as it gets. Made with fresh watermelon, tart lime juice, and crisp fresh mint you will not be able to get enough of this yummy drink. It is also non-alcoholic which makes it a great option for anyone avoiding alcohol as well as the kids in your life.

Not only is it delicious, what I love about this mojito mocktail is that it’s sweetened with maple syrup instead of refined sugar. A simple maple simple syrup adds just the right touch of sweetness without overpowering the drink. While I love the touch of sweetness in this drink, feel free to leave it out if you need to keep this recipe entirely sugar free.

Tools You’ll Need to Make This Recipe

How to Make Maple Simple Syrup

This drink is sweetened with an unrefined maple simple syrup instead of traditional simple syrup with refined sugar. To make the maple simple syrup, add equal parts simple syrup and water to a small sauce pan. Heat the mixture to a low simmer and let the syrup cook for around five minutes until it begins to thicken a bit.

Once the syrup has thickened a bit, remove the sauce pan from the heat and allow the simple syrup to cool. When the syrup has come to a complete cool, transfer it to a clean, air-tight, storage container. Store the simple syrup in the fridge to keep it fresh.

Step One: First, make the watermelon, lime, and mint mixture that is the base of these cocktails. To do this, add the watermelon, lime juice, and mint leaves to a high powered blender and blend until smooth.

Step Two: Once the mixture is well blended, strain it through a fine mesh sieve to remove any pulp.

Step Three: Next, add the maple simple syrup to the watermelon mixture to sweeten it.

Step Four: Divide the watermelon mixture between glasses filled with ice.

Step Five: Top each glass off with lime sparkling water and garnish with fresh mint and watermelon. Serve and enjoy!

Tips and Tricks for the Best Watermelon Mojito

  • Make the maple simple syrup in advance so you can whip these drinks up whenever you want.
  • This recipe calls for 1/4 a cup of the maple simple syrup mixture but feel free to sweeten these drinks to your liking. If you want them a bit more sweet or a bit less sweet, just add more or less sweetener.
  • You can grab a pre-cut watermelon from your local grocery store to make this recipe even easier.
  • If you want a single serve drink, you can halve the recipe or save the remaining watermelon mint mixture in an air-tight container in the fridge.
  • Leave the sweetener out entirely for a refreshing unsweetened drink that is still absolutely delicious and Whole30 compliant!
