Watermelon Mojito Mocktail

Ingredients

  • 2 cups fresh watermelon cubes
  • 12 mint leaves plus more for garnish
  • ¼ cup fresh lime juice
  • ¼ cup honey simple syrup
  • Lime sparkling water

Method

  1. First, make the maple simple syrup by combining equal parts maple syrup and water in a small saucepan. Heat the mixture to a low simmer and let the syrup cook for around five minutes until it begins to thicken a bit. Once the syrup has thickened a bit, remove the sauce pan from the heat and allow it to cool. When the syrup has come to a complete cool, transfer it to a clean, air-tight, storage container. Store the simple syrup in the fridge to keep it fresh.
  2. Next, add the watermelon, lime juice, and mint leaves to a high powered blender and blend until smooth. Once the mixture is well blended, strain it through a fine mesh sieve to remove any pulp.
  3. Add the maple simple syrup to the watermelon mixture.
  4. Divide the watermelon mixture between glasses filled with ice.
  5. Top each glass off with lime sparkling water and garnish with fresh mint and watermelon. Serve and enjoy!
