Did you grow up eating sloppy Joe sandwiches? I sure did, and my turkey sloppy Joes are still one of my favorite comfort foods! The sweet, savory, tangy flavors never get old.
Y’all know I love a good bowl so it was only a matter of time until I turned my favorite sloppy joe recipe into a bowl! So, I deconstructed my sweet potato sloppy Joes to create this sweet potato sloppy Joe bowl recipe. It has all the classic flavors you know and love with the benefit of more veggies. Honestly, it might almost be better than a classic sloppy joe!

Recipe Ingredients

- Roasted Sweet Potatoes: peeled and diced sweet potatoes are tossed with a neutral-tasting oil, salt, pepper, chili powder, and paprika.
- Sloppy Joe Sauce: I combine yellow mustard, brown sugar (or coconut sugar), tomato paste, water, apple cider vinegar, Worcestershire sauce, crushed red pepper flakes, salt, and pepper for that classic sweet and tangy flavor you love about sloppy joes.
- Sloppy Joe Meat Mixture: I brown some lean ground beef and then add yellow onion, garlic, green bell pepper, and seasonings. You could easily swap ground beef for the ground turkey if you prefer.


How to Make Sloppy Joe Bowls
- Roast the sweet potatoes. Follow the same method for my perfectly roasted sweet potatoes, tossing the diced potatoes, oil, and spices in a bowl. Then, spread them in an even layer on a large baking sheet, and roast until the potatoes are fork-tender, flipping frequently.
- Make the sloppy Joe sauce. Whisk all the ingredients in a large bowl, and set aside.
- Brown the beef. While the potatoes roast, heat oil in a large skillet, and brown the beef over medium-high heat, breaking it into pieces as it cooks.
- Add veggies. Once the beef is cooked, add the diced veggies, salt, and pepper, and continue to cook until the vegetables are tender.
- Simmer. Reduce the heat to low, and pour in the sloppy Joe sauce. Stir to combine, and simmer until the sauce thickens.
- Build your bowls. Divide the roasted sweet potatoes and sloppy Joe mixture between bowls. Then, add your favorite toppings, and enjoy warm!

Topping Ideas and Sides
I love to serve my sloppy Joe bowls topped with pickles, pickled red onions, and chives. However, they’re also great with shredded cheese, jalapenos, or even homemade coleslaw.
With potatoes, meat, and veggies, the bowls are plenty filling enough on their own, but you can never go wrong with a side of green chili cornbread or a side of extra veggies like my creamy cucumber radish salad.

How to Store Your Leftovers
For the best results, I recommend storing the potatoes and meat mixture in separate airtight containers to prevent them from becoming soggy. The roasted sweet potatoes will stay fresh in the fridge for up to 4 days, and the meat mixture will keep for 3-4 days.
To serve, assemble your bowls and warm them in the microwave. Or, heat the potatoes in the oven, and warm the meat mixture in a skillet over medium heat.

Ingredients
Roasted Sweet Potatoes
- 2 medium to large sweet potatoes, peeled and diced into 1/2 inch cubes
- 1 1/2 tablespoons oil
- 1/2 teaspoon kosher salt
- black pepper, to taste
- 1/4 teaspoon chili powder
- 1/4 teaspoon paprika
Sloppy Joe Sauce
- 2 teaspoons yellow mustard
- 1/4 cup brown sugar or coconut sugar
- 6 oz canned tomato paste
- 1/2 cup water
- 1 tablespoon apple cider vinegar
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Sloppy Joe Mixture
- 1 teaspoon oil
- 1 pound lean ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 small green bell pepper, finely diced
- salt and pepper, to taste
For Serving
- pickles
- pickled red onions
- chives, for garnish
Instructions
- Roast the Sweet Potatoes: Preheat oven to 425 degrees. Add the diced potatoes to a mixing bowl and then add the oil, kosher salt, black pepper, chili powder, and paprika. Toss until the potatoes are coated in the seasonings.
- Transfer the sweet potatoes to a large baking sheet and arrange in a single layer. Bake at 425 degrees for 25-35 minutes until tender, flipping every 10-15 minutes.
- Make the Sloppy Joe Sauce: Add all of the sauce ingredients to a mixing bowl and whisk together until well combined. Set aside.
- Make the Sloppy Joe Mixture: Heat a large skillet over medium-high heat. Once hot, add the avocado oil and then add the ground beef. Brown the ground beef until no longer pink, breaking it up as it cooks.
- Once the meat has browned add the diced onion, garlic, and bell pepper to the skillet along with a pinch of salt and black pepper. Continue to cook for 3-5 minutes until the onion is tender and translucent.
- Next, lower the heat to low and pour in the sloppy Joe sauce. Stir until well combined and let simmer on low for 10-12 minutes. The sauce should thicken a bit as it simmers.
- Build the Bowls: Add the roasted sweet potatoes and sloppy joe mixture evenly to your desired amount of bowls. Top the bowls with pickles, pickled red onion, fresh chives, and whatever other toppings you love.
