Description
These Sloppy Joe Bowls are everything you love about the classic sandwich with a grown-up twist. I made these bowls with chili spiced sweet potatoes as the base and then layered on a saucy veggie-filled and protein packed sloppy joe sauce. Then, each bowl is finished with your favorite toppings. Roasted Sweet Potatoes
- 2 medium to large sweet potatoes, peeled and diced into 1/2 inch cubes
- 1 1/2 tablespoons oil
- 1/2 teaspoon kosher salt
- black pepper, to taste
- 1/4 teaspoon chili powder
- 1/4 teaspoon paprika
Sloppy Joe Sauce
- 2 teaspoons yellow mustard
- 1/4 cup brown sugar or coconut sugar
- 6 oz canned tomato paste
- 1/2 cup water
- 1 tablespoon apple cider vinegar
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Sloppy Joe Mixture
- 1 teaspoon oil
- 1 pound lean ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 small green bell pepper, finely diced
- salt and pepper, to taste
For Serving
- pickles
- pickled red onions
- chives, for garnish
Instructions
- Roast the Sweet Potatoes: Preheat oven to 425 degrees. Add the diced potatoes to a mixing bowl and then add the oil, kosher salt, black pepper, chili powder, and paprika. Toss until the potatoes are coated in the seasonings.
- Transfer the sweet potatoes to a large baking sheet and arrange in a single layer. Bake at 425 degrees for 25-35 minutes until tender, flipping every 10-15 minutes.
- Make the Sloppy Joe Sauce: Add all of the sauce ingredients to a mixing bowl and whisk together until well combined. Set aside.
- Make the Sloppy Joe Mixture: Heat a large skillet over medium-high heat. Once hot, add the avocado oil and then add the ground beef. Brown the ground beef until no longer pink, breaking it up as it cooks.
- Once the meat has browned add the diced onion, garlic, and bell pepper to the skillet along with a pinch of salt and black pepper. Continue to cook for 3-5 minutes until the onion is tender and translucent.
- Next, lower the heat to low and pour in the sloppy Joe sauce. Stir until well combined and let simmer on low for 10-12 minutes. The sauce should thicken a bit as it simmers.
- Build the Bowls: Add the roasted sweet potatoes and sloppy joe mixture evenly to your desired amount of bowls. Top the bowls with pickles, pickled red onion, fresh chives, and whatever other toppings you love.
