I love a good weekend meal prep session, to help make my life easier on busy weeks, and when I need the ultimate easy make-ahead breakfast baked oatmeal is my go-to!

This easy baked oatmeal with raspberries is a new fave and I know you’re going to love it! The whole grain oats make it nice and hearty, plus it’s just the right amount of sweet and studded with the perfect amount of chocolate chips. Truly, the best. Plus, it takes just a few minutes to make, freezes well, and is easy to customize!

Recipe Ingredients 

Eggs: these help hold the baked oatmeal together. 

Almond Milk: feel free to use sweetened or unsweetened almond milk for this recipe. 

Dark Brown Sugar: adds just the right amount of sweetness!

Melted Butter: I like to use a little melted butter to give the oatmeal a slightly richer flavor that reminds me of the oatmeal I grew up eating.

Vanilla Extractinfuses the oatmeal with delicious vanilla flavor. 

Old Fashioned Oats: if you have a gluten allergy look for certified gluten-free oats.

Baking Powder: helps the oatmeal rise.

Ground Cinnamon: a pinch of ground cinnamon adds a touch of warmth that works well with the oats.

Chocolate Chips: feel free to use regular-sized or mini chocolate chips. I like dark chocolate chips, but milk chocolate, semi-sweet, or even white chocolate would taste great. 

Raspberries: the star of the show! We’re using 2 cups of fresh raspberries for this recipe. Then, be sure to add a little extra for topping.

Ingredient Substitutions and Ways to Switch Things Up

  1. Almond Milk – coconut milk, oat milk, cashew milk, or whole milk will all work well in this raspberry baked oatmeal recipe. 
  2. Dairy-Free – if you need to keep your oatmeal completely dairy-free, use dairy-free butter or coconut oil and dairy-free chocolate chips. 
  3. Fruit – try adding a handful of fresh blackberries, sliced banana, or even dried fruit.
  4. Nuts and Seeds – include almonds, walnuts, or pumpkin seeds for a bit of crunch. 
  5. Extra Spices – add more cinnamon or include a pinch of nutmeg. 

How to Make Baked Oatmeal with Raspberries 

Step One: Preheat the oven to 350 degrees. 

Step Two: To a large mixing bowl, add the eggs, almond milk, dark brown sugar, melted butter, and vanilla extract. Whisk all the wet ingredients together until well combined. 

Step Three: Next, add the oats, baking powder, ground cinnamon, and salt to the mixing bowl, and stir until well combined. 

Step Four: Lastly, fold the chocolate chips and fresh raspberries into the oat batter until well combined. 

Step Five: Transfer the batter to a greased 9×9 inch baking dish. 

Step Six: Bake for 35-40 minutes or until the oatmeal is just set.

Ways to Serve 

This raspberry baked oatmeal is perfectly good on its own, but you can also add a drizzle of maple syrup for extra sweetness.

I love to top mine with fresh sliced bananas, more sliced raspberries, and a bit of extra coconut. You can also top a slice with a dollop of plain or vanilla Greek yogurt, fresh berries, sliced nuts, or nut butter. Or, add a dollop of whipped cream if you’re feeling fancy.

Favorite Make Ahead Tips 

If you want to prep this recipe in advance, you have a couple of easy options: 

Option One: Add all the dry ingredients to a mixing bowl, cover, and let sit on the counter. Next, whisk together all of the wet ingredients in a mixing bowl until well combined. Cover the mixture, and place it in the fridge. The next day, when you are ready to make your baked oatmeal, just combine the wet and the dry ingredients, fold in any mix-ins, and bake.

Option Two: The second option is my personal favorite which is to bake the oatmeal the night before and then reheat it in the morning. You can reheat a slice of the oatmeal in the microwave for thirty seconds at a time until hot.

How to Store and Freeze

  1. Store leftover baked oatmeal with raspberries in an airtight container in the fridge for 4-5 days.
  2. Freeze the cooled oatmeal in a freezer-safe storage container for up to 3 months. 
  3. Reheat thawed or frozen leftovers in the microwave for thirty seconds at a time until warm or in the oven at 350 degrees, wrapped in foil, until warmed through.
