Description

This Raspberry Baked Oatmeal combines old-fashioned oats with a touch of dark brown sugar for sweetness, cinnamon, sweet raspberries, and chocolate chips for a little decadence. So easy to make and it’s the perfect make-ahead breakfast or snack!


Ingredients

  • 2 eggs
  • 1 3/4 cups almond milk
  • 1/2 cup dark brown sugar or coconut sugar
  • 1/4 cup melted butter
  • 2 teaspoons vanilla extract
  • 2 1/4 cups old-fashioned rolled oats
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips, plus more for the top
  • 2 cups raspberries, plus more for the top


Instructions

  1. Preheat oven to 350 degrees and grease an 9×9 baking dish.
  2. To a large mixing bowl, add the eggs, almond milk, dark brown sugar, melted butter, and vanilla extract. Whisk all of the wet ingredients together until well combined.
  3. Next, add the oats, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.
  4. Lastly fold the chocolate chips and fresh raspberries into the oat batter.
  5. Transfer the oatmeal batter to the greased baking dish and top with a few more raspberries.
  6. Bake at 350 degrees for 35-40 minutes or until the oatmeal is set.
