If you ask me, everything tastes better in a bowl. I don’t know why. It just does! That said, lately, I’ve been on a big gochujang kick, making bowls like my gochujang salmon bowls and gochujang chicken bowls. So, naturally, the next step was to make gochujang beef bowls, too.
They Korean inspired beef bowls turned out even better than expected! Sweet, savory, tangy, with fresh toppings, these bowls have it all! Plus, they cook in one skillet in about 20 minutes. What more could you want? I know you’ll love them as much as we do. Just don’t say I didn’t warn you.

Recipe Ingredients

- Gochujang Paste: this is a Korean condiment and a thick paste that’s made from red chili. It’s spicy, savory, salty, and just slightly sweet. You can typically find it in an Asian grocery store.
- Soy Sauce: I use low-sodium soy sauce for this recipe. You could swap this for coconut aminos if you prefer.
- Honey: balances the spicy, savory flavors with the perfect touch of sweetness! Substitute maple syrup if that’s what you prefer.
- Ginger and Garlic: freshly grated ginger and crushed or finely minced garlic cloves add lots of flavor and depth to these Korean ground beef bowls.
- Sesame Oil: this adds the perfect sesame flavor.
- Rice Vinegar: the acidity adds a touch of brightness.
- Ground Beef: I prefer to use 93/7 lean ground beef for this recipe. If you use a fattier beef I would recommend draining it after cooking. Ground turkey or ground chicken would also work.

How to Make Korean Beef Bowls (One Pan, 3 Steps!)
Step One: Whisk all the sauce ingredients until well combined.
Step Two: Brown the beef in oil over medium-high heat, adding salt and pepper and breaking it up as it cooks. Then, add the minced garlic, sauté until fragrant, and drain any excess fat from the pan.
Step Three: Next, add the sliced green onion and simmer. Serve warm over rice with cucumber, carrot, radish, kimchi, sliced green onion, and sesame seeds. Enjoy!

Ashlea’s Meal Prep Tips and Tricks
One of my favorite things about a good bowl recipe, like this one, is that it’s easy to prep in advance for a quick lunch or dinner. Here are my tips to keep everything fresh:
- Prepare the rice – Cook the rice a day or so ahead of time, and store it in a separate airtight container in the fridge.
- Make the gochujang sauce – Prep the gochujang sauce, and store it in an airtight container in the fridge for up to 1 week.
- Assemble when ready – When you’re ready, just cook the beef and veggies, add your sauce, and you’re done!

These Korean Beef Bowls are inspired by Korean flavors and such a fun way to switch up dinner and meal prep. Ingredients
- 1 tablespoon gochujang paste
- 1/4 cup low-sodium soy sauce
- 1 tablespoon honey
- 2 teaspoons grated ginger
- 1 1/2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons sliced green onion (the white and light green part)
- 1 1/4 pound 93/7 ground beef
- 4 cloves garlic, crushed or finely minced
For Serving
- 2 cups cooked white rice
- 1 cup cucumber, sliced in half moons
- 1 cup carrot, grated
- 1/2 cup thinly sliced radish
- 1/2 cup kimchi
- thinly sliced green onion, for garnishing
- sesame seed, for garnishing
Instructions
- Make the Sauce: Whisk together the gochujang paste, soy sauce, honey, ginger, sesame oil, and rice vinegar until well combined.
- Cook the Beef: Heat a large skillet over medium-high heat. Once hot, add a bit of avocado oil and then add the ground beef. Season with a pinch salt and pepper and brown the ground beef, breaking it up as it cooks. Next, add the minced garlic and sauté for another minute. Drain any excess fat from the pan.
- Next, add the sliced green onion and sauce to the pan. Stir until well combined and then simmer for 1-2 minutes.
- Remove the beef from the heat and serve over rice with cucumber, carrot, radish, kimchi, sliced green onion, and sesame seed.
