I’ll never turn down a s’more, ok? In fact, this summer, I’ve become acutely aware of how much I love them. There’s just something about the combination of chocolate, crisp graham crackers, and the best part – the gooey, toasted marshmallow. SO. GOOD.

These bars are so easy to make and have all of the flavor of a s’mores in one delicious cookie bar. It’s got everything you love about a classic s’mores sliced into bars. Plus, they’re the perfect make-ahead option for BBQs, picnics, and parties. You’re going to LOVE!

Recipe Ingredients

Mix-Ins: we’re using semi-sweet chocolate chips, mini marshmallows, and gluten-free honey graham crackers to create that classic s’mores taste we all love.

Chocolate Bar: I like to use semi-sweet chocolate for these bars, but dark chocolate or milk chocolate will also work if that’s what you prefer. 

Flour: to keep these bars gluten-free, I used a 1:1 gluten-free all-purpose flour for the base of the batter. I’ve linked the specific brand I use and love in the recipe card, below.

Baking Soda and Baking Powder: For the best results, make sure they’re both fresh! 

Salt: just a bit of regular kosher salt in the bars helps to enhance the rest of the ingredients. Then, I like to sprinkle flakey sea salt on top for that perfect finish.

Melted Butter: this adds the perfect richness and delicious flavor.

Sugar: a combination of granulated sugar and dark brown sugar sweetens the recipe while keeping the bars soft and moist. 

Eggs: we’re using one whole egg and one egg yolk to add structure to the recipe and create the ultimate fudgy cookie texture. Trust me on this!

Vanilla Extract: a must for extra depth of flavor and a subtle vanilla taste.

Ingredient Swaps

  1. Flour – I’ve tested these bars with both gluten free and all-purpose flour and both work well! If you don’t have a gluten intolerance or allergy, feel free to use regular all-purpose flour. 
  2. Butter – If you need to keep this recipe gluten free feel free to sub the butter for a vegan butter instead. I haven’t tested it but you could likely also substitute coconut oil as well. Just know that using coconut oil will give the bars a slight coconut flavor.
  3. Chocolate – Substitute the semi-sweet chocolate with milk chocolate, dark chocolate, or your favorite dairy-free variety to keep the bars dairy free.

Kitchen Essentials

Step One: Preheat your oven to 350 degrees. Then, line a square baking dish with parchment paper, and lightly grease it with cooking spray. 

Step Two: Add the chocolate chips, mini marshmallows, and chopped graham crackers to a mixing bowl, and toss to combine. 

Step Three: Add the flour, baking soda, baking powder, and salt to a second bowl, and whisk to combine. 

Step Four: In a third bowl, add the granulated sugar, dark brown sugar, melted butter, and vanilla. Beat the wet ingredients with a hand mixer until well combined. Next, add the egg and egg yolk to the mixture, and beat again. 

Step Five: Fold the flour mixture into the bowl of wet ingredients, and stir until well combined. Next, add the mix-ins, and fold to distribute them evenly throughout the dough. Top the dough with the chopped chocolate bar, mini marshmallows, and crushed graham cracker.

Step Six: Bake the s’mores bars for 20 to 25 minutes or until the edges are set and the marshmallows are golden brown on top.  It’s normal for the edges to be a bit bubbly and caramelized! Remove the bars from the oven, and top them with flaky sea salt. 

Step Seven: Let the bars cool in the pan for 10 to 15 minutes or until they have set. Then, slice them into 16 bars, and enjoy!

How to Store 

Store: Cover the baking dish tightly with storage wrap, or transfer the bars to an airtight container. They will stay fresh on the counter for 2-3 days.

Freeze: Wrap each bar in plastic wrap, and transfer them to a sealable bag or freezer-safe container. Freeze for up to 3 months. Thaw in the fridge overnight, or let the s’mores bars soften at room temperature when you’re ready to eat.

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups mini marshmallows (plus 1/3 cup for the top)
  • 4 gluten free honey graham crackers, chopped (plus 2 more for the top)
  • 1 oz semi-sweet chocolate bar, chopped
  • 1 1/2 cup of gluten free all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 10 tablespoons butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • flaky sea salt, to top

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9X9 baking dish with parchment paper and lightly grease. Set aside.
  2. Prepare your mix-ins: Add the chocolate chips, mini-marshmallows, and chopped graham crackers to a mixing bowl. Toss until well combined.
  3. To a medium mixing bowl, add the flour, baking soda, baking powder, and salt. Whisk until well combined and set aside.
  4. To another mixing bowl, add the granulated sugar, dark brown sugar, melted butter, and vanilla. Beat with a hand mixer for 2-3 minutes until well combined. Next, add the egg and egg yolk to the mixture. Beat again until incorporated.
  5. Fold the flour mixture into the wet ingredients and stir until well combined. Then, add the mix-ins to the dough and fold until evenly distributed.
  6. Transfer the dough to the prepared baking dish and gently spread into an even layer.
  7. Top the dough with chopped chocolate, mini-marshmallows, and the crushed graham cracker.
  8. Bake the bars at 350 degrees for 20-25 minutes or until the edges are set and the marshmallows on top are golden brown. It’s normal for the edges to be a bit bubbly and caramelized. Remove the bars from the oven and top with flaky sea salt.
