Pumpkin Spice Cold Brew Coffee that is a delicious homemade version of your favorite cozy fall spiced coffee shop drink made right at home. This drink is made with simple ingredients like real pumpkin puree, maple syrup, and your favorite milk of choice.
I love the transition from August to September when everything pumpkin spice is in full force. Even though the temperature hasn’t really changed, we’re all still pretending fall is right around the corner.
The transition from summer to fall is the perfect time to start dreaming of cozy sweaters, hot apple cider, and of course everyone’s seasonal favorite – the pumpkin spice latte.

But, if you’re anything like me, the last thing you want in the afternoon is a hot pumpkin spice latte, especially when it’s still almost 100 degrees outside. That’s why this iced pumpkin spice cold brew is the perfect drink.
It’s served over ice so that you can enjoy all of your favorite pumpkin spice flavors even when it’s still warm outside.
Cold Brew Ingredients
Cold Brew Coffee: You can make your own homemade cold brew or buy your favorite. Because I like my coffee a bit on the stronger side, I like to use a cold brew concentrate.
Milk of Choice: A non-dairy milk like almond, oat, or cashew milk work great in this recipe. You can also use regular dairy milk if you prefer. The choice is totally up to you!
Pumpkin: this homemade drink is made with real pure pumpkin puree. Because this is a drink, you won’t need much, as little pumpkin goes a long way. You can usually find canned pumpkin in the baking aisle of your grocery store. Be sure you grab pure pumpkin and not pumpkin puree.
Pumpkin Pie Spice: You can make your own homemade pumpkin pie spice or buy your favorite store bought brand.
Maple Syrup: The flavor of the maple syrup works really well with the other fall flavors in this coffee. It also blends well because the syrup is already in a liquid form. If you don’t want to use maple syrup, you could also use honey or your favorite sweetener of choice.
Vanilla Extract: A must-have in this recipe to give the drink that delicious vanilla flavor.
How to Make Pumpkin Spice Cold Brew
Step One: Add all of the drink ingredients to a high-powered blender.
Step Two: Blend on until all of the ingredients are well combined and the drink is smooth, creamy, and frothy.
Step Three: Pour the cold brew over ice, top with a little pumpkin pie spice, and serve immediately.
How to Make This Drink In Advance
If you want to prep this drink in advance, combine all of the ingredients, except the cold brew, and store in an air-tight container like a mason jar. When you are ready to make your drink, add the cold brew and the pumpkin spice mixture to a blender and blend until everything is well combined.
Tips and Tricks for the Best Pumpkin Spice Cold Brew
Want your pumpkin spice cold brew to be a bit sweeter? Feel free adjust the sweetness by adding more (or less) maple syrup.
This recipe makes one serving. Feel free to make a double batch for two servings.
If you want your pumpkin cold brew to be a bit more decadent, feel free to use half and half instead of regular or non-dairy milk.

Per usual, your recipes are always right on. I followed the recipe exactly as listed and used oat milk. It was the perfect level of creamy and sweet. Nothing less or more needed! This is my new fall weekend treat!
This was fantastic! Just don’t over blend like I did or it’s a little too frothy, but that’s just my personal preference. I enjoyed this iced cold brew because it’s still hot in FL, lots of fall flavor and pumpkin!
Amazing, and so adaptable to whatever you have in the fridge! Such a great afternoon pick me up. Also fulfilled my autumn dreams while still quenching the September heat. Thank you!
So refreshing and delicious!! This recipe came in perfect timing.. I bought a milk frother the other day to make pumpkin cream cold brews at home and they didnt turn out well 🙁 I love how all I need is a blender and it all comes together so well and so EASY! I used unsweetened almond milk but I’m going to try full fat coconut milk next time! 😋 I’m so happy I found your website, thanks for these amazing yet still healthy recipes!!
I love this drink for a nice afternoon pick me up! It’s the perfect taste of pumpkin without being overpowering. I’ve made it several times now. I made it today without the pumpkin purée because I forgot to buy some at the store, so I use a little bit of a banana instead and added extra pumpkin spice and it still tasted great!
I finally had a chance to make this recipe this morning. 10/10 way better than at a shop & WAY cheaper! Thanks so much for helping out this tired mama!
I made this with oat milk and it was wonderful! Not overly sweet like you get from chain coffee stores. I’m excited to play with flavors and amount of coffee too.
I added 1 tbsp of SF French vanilla syrup because I like things sweeter and I think it tastes fantastic! Thank you for creating this recipe! I miss my pumpkin cream cold brews from Starbucks, but can’t imagine using 7 smart points on a tall! For anyone on WW, this is 2 points on green using 1% milk. 💚
This recipe is incredible! If you’re looking for a healthier pumpkin spice coffee recipe, look no further! We will be making this on repeat all season!
Such a fabulous and easy recipe getting me excited for the fall season and everything pumpkin during this summer heat. I love how I already had all of the ingredients listed and they are very minimal! My husband loved it too. Starbs who??
This was SO good. I’m a fan of all things pumpkin in the fall and this did not disappoint. Hope to make your hot PSL version soon. Thanks for inspiring me to make new coffee drinks while continuing to be “safer at home”. Thanks for a great treat, Ashlea!
It’s actually not that warm anymore where I live 😉 Would it be possible to make a creamer out of everything but the coffee and then use it with hot coffee? Real pumpkin puree is just soo much better than the coffee shop flavors!
Just made this today for a mid-day pick me up and wowwwww! This is perfection! Nice and light and creamy. The coffee shop version can be so heavy and sweet, and this fulfills my need for a fall treat without derailing my nutrition goals. Will keep this on my fall rotation from now on!
So happy to hear that Garen! I agree, the coffee shop version can be a bit too sweet for me as well. I’m so glad you liked the recipe and that you’ll be adding it to your fall rotation!

I don’t like any of the PSL from Starbucks or other coffee shops because they taste nothing like actual pumpkin. This on the other hand was delicious!

How long will the mix keep in the fridge? Sorry if I missed that!
This is a good recipe! However, I would not recommend using coconut milk.
