My Favorite Cucumber Salad

We eat this salad every single week. It’s that good! I obviously had to share the recipe with you so we could be obsessed together!!!

This cucumber salad has been on repeat in our house for the past few months and when I say repeat I mean we eat it at least once or twice a week. It’s such an easy side dish, we likely always have cucumbers in the fridge (I’m OBSESSED with cucumbers, y’all), and it’s just so light and refreshing which keeps you coming back for more and more and more.

Personally, I love pairing this with a protein and cooked rice for a quick 20 minute meal and it’s saved on those busy weeknights when I just can’t figure out what to cook.

Salad Ingredients 

  • Persian Cucumbers: We’re using Persian cucumbers for this recipe because they have fewer seeds and a thinner skin than traditional cucumbers. If you can’t find Persian cucumbers, English cucumbers (also known as hot house cucumbers) will also work. 
  • Rice Vinegar: This adds a bit of a slightly sweet and tangy flavor.
  • Sesame Oil: You can usually find this in the Asian section of your local grocery store.
  • Chili Garlic Crisp: A spicy condiment that adds so much flavor to this recipe! Like the sesame oil, I typically find this in the Asian section of my local grocery store. 
  • Soy Sauce: You can also swap this for coconut aminos if you prefer. If you like things on the sweeter side then coconut aminos also is a bit sweeter than soy sauce.
  • Honey: Adds some sweetness to balance out the flavors in the salad. Maple syrup will also work. 
  • Garlic: You’ll need at least one clove of garlic for this recipe, but feel free to add more! 
  • Green Onion: Use both the white and green parts.

How to Make This Cucumber Salad Recipe

  1. Combine. Add all the salad ingredients to a large bowl, and toss to combine. Give the salad a taste and adjust the seasonings as needed. If you like things on the spicy side add more chili crisp. You can really make this salad your own!
  2. Chill and serve. Chill in the fridge, and enjoy!

How to Store

Store leftover spicy cucumber salad in an air-tight container in the fridge for up to 1-2 days. I find that this salad really tastes better fresh.

Ingredients

Units Scale
  • 1 pound Persian cucumbers, cut into half moons
  • 2 teaspoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 teaspoons chili garlic crisp
  • 1 teaspoon soy sauce
  • 1/2 teaspoon honey
  • 1/2 teaspoon salt, plus more to taste
  • 1 clove minced or grated garlic
  • 1/4 sliced green onion

Instructions

  1. Add all of the cucumber salad ingredients to a large mixing bowl. 
  2. Stir until well combined. Taste the cucumber salad and add additional salt if needed. 
  3. Store the salad in the fridge until ready to use.
