Description

This simple and delicious Asian-inspired Cucumber Salad is slightly sweet, tangy, refreshing and made with the perfect touch of heat from chili crisp. This salad will only take you a few minutes to make and it’s the perfect cool and crisp side dish to pair with so many different recipes!


Ingredients

  • 1 pound Persian cucumbers, cut into half moons
  • 2 teaspoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 teaspoons chili garlic crisp
  • 1 teaspoon soy sauce
  • 1/2 teaspoon honey
  • 1/2 teaspoon salt, plus more to taste
  • 1 clove minced or grated garlic
  • 1/4 sliced green onion

Instructions

  1. Add all of the cucumber salad ingredients to a large mixing bowl. 
  2. Stir until well combined. Taste the cucumber salad and add additional salt if needed. 
  3. Store the salad in the fridge until ready to use.
