We’ve got Chipotle at home! I’m constantly trying to figure out how to make some of my take favorites at home to save myself some money and better control thThis homemade corn salsa recipe is even better than the takeout chain version and incredibly easy to make. Plus, unlike the restaurant version, you can easily customize it to suit your specific flavor preferences. You can use it to top your chicken burrito bowls, steak tacos, or serve it as an appetizer when hosting!

Recipe Ingredients
Corn: apparently Chipotle uses white sweet corn in their salsa so that’s what we’re using in this recipe! Of course, if needed, you can substitute the white corn for yellow corn.
Jalapeño Pepper: diced jalapeño adds just a little heat to the salsa along with flavor. Remove the membrane and seeds before dicing if you want to cut down the amount of heat.
Red Onion: rinse or soak the red onion in cold water before using it to take away some of that classic red onion ‘bite’.
Roasted Poblano Pepper: if you’ve never roasted a poblano, take a look at this post on how to roast poblano peppers before you begin.
Cilantro: You can’t have fresh salsa without cilantro!
Salt: adding a pinch of salt enhances the flavor and helps to draw moisture out of the veggies to make the salsa a bit more “juicy”.
Lime Juice: fresh lime juice is best for this recipe!

How to Make Chipotle Corn Salsa
Step One: Cook the corn according to the package instructions. Then, set it aside to cool completely.
Step Two: Once the corn has cooled, add it to a mixing bowl along with the jalapeño pepper, red onion, roasted poblano pepper, salt, cilantro, and lime juice.
Step Three: Stir until well combined, and serve immediately. Or, transfer the mixture to your fridge to chill until you’re ready to serve!

Tips for the Best Salsa
- Dice It Up: For the best salsa, you want to chop all the ingredients into small, uniform pieces. That way you get a little bit of everything in every single bite.
- Let the Flavors Meld: Before serving, let your chipotle corn salsa sit for 30 minutes to give all the flavors a chance to come together.
- Kick Up the Heat: If you like your salsa on the spicier side, then leave the ribs and seeds of the jalapeño intact when dicing to add a bit of extra heat.
- Adjust the sweetness: If you like your salsa on the sweeter side, feel free to add more corn or even a touch of honey!

- 16 oz frozen white sweet corn
- 1 small jalapeño pepper, seeded and diced
- 1/4 cup diced red onion
- 1 small roasted poblano pepper, seeded and diced
- 1/4 teaspoon kosher salt, plus more to taste
- 1/4 cup fresh chopped cilantro
- 2 tablespoons fresh lime juice
Instructions
- Cook the corn according to the package instructions and then set aside and let cool completely.
- Once the corn has cooled, add it to a mixing bowl along with the jalapeño pepper, red onion, roasted poblano pepper, salt, cilantro, and lime juice.
