Description

This easy Chipotle Corn Salsa is exactly what you need to make Chipotle bowls at home! The salsa is made with just seven simple ingredients, it comes together in minutes and is perfect for both snacking or topping your burrito bowls!


Ingredients

  • 16 oz frozen white sweet corn
  • 1 small jalapeño pepper, seeded and diced
  • 1/4 cup diced red onion 
  • 1 small roasted poblano pepper, seeded and diced
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/4 cup fresh chopped cilantro
  • 2 tablespoons fresh lime juice 


Instructions

  1. Cook the corn according to the package instructions and then set aside and let cool completely. 
  2. Once the corn has cooled, add it to a mixing bowl along with the jalapeño pepper, red onion, roasted poblano pepper, salt, cilantro, and lime juice. 
  3. Stir the salsa until well combined and then serve immediately or place in the fridge until you’re ready to serve!
