The Easiest Three Bean Chili (Perfect Weeknight Dinner!)

If you’re anything like me, you probably have a few cans of beans waiting to be used in your pantry at all times. Beans are inexpensive, easy to add to meals, and I always grab a few cans when I’m at the grocery store. If you’ve got a few cans of beans that need to be used then you have to make this three bean turkey chili! It’s made with the perfect blend of spices plus my secret ingredient for the best flavor.

Simple Recipe Ingredients 

Ground Turkey: this recipe uses lean ground turkey but you could easily swap it for ground beef or even ground chicken if you prefer.

Veggies: we’re using yellow onion plus fire-roasted tomatoes for extra flavor.  

Herbs and Spices: There’s no need for a pre-made chili seasoning packet in this recipe! We’re using a blend of bay leaves, chili powder, cumin, dried oregano, smoked paprika, chipotle powder, sea salt, and black pepper create a bold, savory, spicy taste. 

Cocoa Powder: Trust me on this! This is my secret ingredient for a really delicious chili. It adds depth and richness, complementing the warm spices. 

Beans: For the beans in this recipe we’re using a combination of black beans, pinto beans, and kidney beans makes. I love this particular combo but feel free to use whatever combination of beans you prefer. Cannelini beans would be great and even garbanzo beans could work.

Broth: This recipe uses beef broth but vegetable or chicken broth will both work if that’s what you have.

How to Make This Stovetop Three Bean Chili Recipe

Step One: Heat one tablespoon of olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Once shimmering, add the ground turkey and brown, breaking it up as it cooks. 

Step Two:Once the meat has started to brown, add the diced onion and continue to cook until the onion begins to become tender. 

Step Three: Next, add the garlic, dried bay leaves, chili powder, cumin, dried oregano, paprika, chipotle powder, cocoa powder, salt, and black pepper. Stir to combine. Then, sauté for another minute or until the spices are fragrant. 

Step Four:  Add the canned tomatoes, beans, and beef broth to the pot. Bring the chili to a boil. Then, reduce the heat to a simmer. Cover and let the chili simmer for 30-40 minutes or until it has thickened. 

Step Five: Serve with your favorite toppings, and enjoy!

Can I Make This Chili in the Slow Cooker? 

Yes, absolutely! If you prefer a more hands-off option, then make a slow cooker version of this three bean chili! Start by browning the ground turkey, then just transfer it to your slow cooker, add the remaining ingredients, and stir until well combined. Cook the chili on high for 3-4 hours, and then serve!

Topping Ideas and Ways to Serve

No bowl of chili is complete without toppings!. My go-tos for this recipe are sour cream or Greek yogurt, sliced green onion, and shredded white cheddar cheese. However, sliced avocado, sliced jalapeño, lime juice, and cilantro are tasty options, too. 

You can enjoy this chili on its own or pair it with white or brown rice, or use it as a topping on baked potatoes. Also, you can never go wrong with a side of green chili cornbread or gluten free honey cornbread muffins

How to Store 

Store leftovers in an airtight container in the fridge for 3-5 days. Or, freeze for up to 3 months! 

Thaw frozen chili in the fridge overnight. Then, reheat it in a pot over medium heat on the stove, or warm individual portions in the microwave.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small yellow onion, diced
  • 6 cloves garlic, minced
  • 1 dried bay leaf
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon chipotle powder
  • 1 teaspoon cocoa powder
  • 2 teaspoons sea salt
  • ¼ teaspoon black pepper
  • 115 oz can fire-roasted canned tomatoes
  • 115 oz can black beans, rinsed and drained
  • 115 oz can pinto beans, rinsed and drained
  • 115 oz can kidney beans, rinsed and drained
  • 2 3/4 cups beef broth
  • Greek yogurt or sour cream, for serving
  • sliced green onion, for serving
  • shredded white cheddar, for serving

Instructions

  5. Serve the chili with your favorite toppings!
