Why You Will Love This Fajita Veggies Recipe
- Easy – The hardest part of this recipe is literally chopping the veggies, that’s it! To save yourself some time on that step you could even buy pre sliced fajita veggies. You may be able to find them in the prepared foods section of your grocery store. Once the vegetables are prepped, they cook in no time!
- Flavorful – What makes these veggies extra delicious is a simple but flavorful combination of spices. That plus a little lime, juice, salt, and pepper really makes them delicious.
- Versatile – Use the veggies in rice bowls, salads, tacos, quesadillas, and more!

Fajita Veggie Recipe Ingredients
Olive Oil: used to sauté the vegetables. Make sure to choose a high-quality oil that you love the taste of.
Veggies: bell peppers, red onion, and garlic form the base of the dish. I use a combination of yellow, red, green, and orange peppers, but any color will work!
Seasonings: you’ll need chili powder, smoked paprika, cumin, dried oregano, salt, and black pepper.
Lime Juice: a squeeze of fresh lime juice adds brightness, balancing out the warmth for a well-rounded taste.
Can I Add More Vegetables?
Absolutely! If you just want to make a fajita-inspired vegetable blend you can feel free to add extra vegetables! Use whatever you have on hand. Mushrooms, zucchini, and even something like cabbage would all be delicious.

How to Make Fajita Veggies
Step One: Heat a large skillet over medium-high heat. Once hot, add the olive oil.
Step Two: Once the oil is hot, add the sliced peppers and onions to the skillet.
Step Three: Cook the veggies for 7-10 minutes or until they are tender yet still crisp and slightly charred on the outside. Stir the veggies occasionally while cooking, and scrape up any browned bits from the bottom. If you prefer your vegetables on the more tender side, cook them for a bit longer.
Step Four: Next, add the minced garlic, spices, salt, and pepper, and toss until well combined. Cook the veggies for an additional minute or until the garlic is fragrant. Then, remove the skillet from the heat.
Step Five: Finish the veggies with a squeeze of lime juice, and enjoy!

Store leftovers in an airtight container in the fridge for up to 3 days. To serve, reheat them in the microwave or in a skillet over medium heat.
Can I Freeze Homemade Chipotle Fajita Veggies?
Yes! These fajita vegetables freeze well for up to 3 months. Store them in an airtight, freezer-safe container. To serve, thaw them in the fridge overnight, and reheat in the microwave or in a skillet on the stove. They won’t be as crisp after thawing and reheating but they will still be delicious!
