These hearty Buffalo Chicken Stuffed Sweet Potatoes are an easy weeknight dinner and such a delicious combo. Tender, tangy shredded buffalo chicken is stuffed into a sweet potato and finished with a delicious creamy ranch drizzle.

Easy Slow Cooker Buffalo Chicken Stuffed Sweet Potatoes

When it comes to easy recipes the slow cooker and the oven are two of my favorite appliances and this delicious recipe for slow cooker buffalo chicken stuffed sweet potatoes yes both!

For me, easy recipes mean lots of hands off cooking time and that true “set it and forget it” vibe. Thankfully, your slow cooker and your oven will do most of the work to get this delicious meal on the table.

Tangy shredded chicken is stuffed into tender sweet potatoes and then finished off with a creamy drizzle of ranch dressing. Trust me, if you’ve never had this combo it is SO GOOD.

Buffalo Chicken Stuffed Sweet Potato Ingredients

Sweet Potatoes: my personal preference for this recipe is deep orange garnet sweet potatoes. I love the color and the flavor.

Ranch Dressing: for that creamy drizzle on top!

Chicken Breast: we’re using lean boneless, skinless chicken breast for a quick cooking protein option.

Buffalo Sauce: use your very favorite buffalo sauce for this recipe, any will work!

Vinegar: in addition to the buffalo sauce this adds an extra bit of tang.

Ghee: this adds a nice rich buttery flavor to the buffalo chicken.

Spices: the combination of onion and garlic powder help give the buffalo chicken an extra punch of flavor.

Green Onion: the perfect way to garnish your stuffed sweet potatoes. Trust me on this one, don’t leave off that final sprinkle of green onion.

Ingredient Substitutions and FAQs

  • Chicken Breast – feel free to use boneless skinless chicken thighs instead of breast if you prefer.
  • Ranch Dressing – I love my homemade dairy free ranch dressing and my homemade dairy free ranch and my healthy jalapeño ranch recipes but feel free to use your favorite store bought brand if you prefer.
  • Sweet Potatoes – don’t love sweet potatoes? regular russet potatoes or Japanese sweet potatoes will also work well in this recipe.
  • Ghee – don’t have ghee? try using butter instead.

How to Make Slow Cooker Buffalo Chicken

Step One: Add the chicken breast, buffalo sauce, vinegar, ghee, and spices to your crockpot. Stir to combine. Cook on high for 2-3 hours or until the chicken breast is cooked through, tender, and easy to shred. Use two forks to shred the meat in the buffalo sauce.

Step Two: Preheat oven to 425 degrees. Thoroughly clean the sweet potatoes and remove any dirt or grit. Prick the sweet potatoes all over with a fork and place them on a sheet pan lined with parchment paper. Bake the sweet potatoes for 45-50 minutes until completely tender. You should easily be able to stick a skewer of toothpick into the thickest part. Once the potatoes are tender, remove them from the oven.

Step Three: Add all of the ingredients to a high-powered blender or food processor until smooth and creamy. 

Step Four: When you are ready to serve, use a sharp knife to split the top of the potato open lengthwise. Give the potato ends a gentle squeeze inward to open it up a bit and use a fork to fluff the insides a bit. Top each potato with a generous spoonful of the shredded buffalo chicken. Top with sliced green onion and a drizzle of ranch dressing.

How to Store and Reheat

If you have leftovers I recommend storing the chicken, ranch, and sweet potatoes all separately until you are ready to reheat and assemble and eat the potatoes. When stored in an air-tight container in the fridge everything should last for 3-4 days.
