Recipe Ingredients

Chicken: the star of the show! I use a store-bought rotisserie chicken to keep this recipe super quick and easy. Just remove the chicken from the bones and chop it up before using. If you prefer, you can use homemade shredded chicken instead.

Fruit: Dried cranberries and fresh apples add a sweet flavor and a bit of crunch. I prefer to use Pink Lady or Honeycrisp for this recipe, but any variety you like best will work. 

Veggies: diced celery and red onion add a little extra crunch and flavor.

Pumpkin seeds: these are my favorite to use in chicken salad for extra crunch and a boost of healthy fats. 

Dill: we’re using plenty of fresh dill to give the chicken salad a delicious herby flavor.  

Mayonnaise: I like to use a bit of mayonnaise in the chicken salad to give it the best flavor. If you prefer, you can swap the mayonnaise out entirely for Greek yogurt.

Greek yogurt: to keep the protein content high and offset some of the fatty flavor of mayonnaise I like to use Greek yogurt in this recipe as well. The yogurt and mayo work together to give the chicken salad a flavor that’s just right. I like to go with non-fat Greek yogurt for this recipe.

Dijon mustard: tangy Dijon mustard gives the salad even more great flavor. 

Lemon juice: freshly squeezed is best! The acidity adds the perfect touch of brightness and helps to prevent the apples from turning brown.

Like I mentioned, this chicken salad recipe is so easy to customize based on your needs and preferences. Here are a few great ways to switch things up:

  • Adding nuts like chopped walnuts, almonds, or pecans
  • Including extra protein such as chopped hard-boiled eggs
  • Swapping out or adding to the fruit with halved grapes or dried cherries

How to Make This Rotisserie Chicken Salad Recipe

Step One: Add the chicken breast, apple, celery, red onion, dried cranberries, pumpkin seeds, and dill to a large mixing bowl. 

Step Two: In a separate bowl, whisk the mayonnaise, Greek yogurt, mustard, salt, pepper, garlic powder, and lemon juice until well combined. 

Step Three: Pour the dressing mixture over the chicken salad ingredients. Stir until the ingredients are well combined and coated. 

Step Four: Serve immediately, or chill in the fridge until you’re ready to serve!

  2. In a lettuce wrap with Bibb lettuce leaves or collard greens
  3. With sliced bread or rolls to make a sandwich or sliders
  4. In a high protein tortilla for a quick wrap
  5. Alongside crackers, pita, or veggie sticks

How to Store 

This recipe actually tastes better when prepared in advance, because all the flavors have time to really meld. Once you’re done making the chicken salad, transfer it to an airtight container, and store it in the fridge for up to 3-4 days.

  • 1 medium pink lady or honey crisp apple
  • 1/2 cup diced celery
  • 1/4 cup finely minced red onion
  • 1/2 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1/4 cup chopped dill
  • 1/4 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon garlic powder
  • 1 tablespoon lemon juice
