Gluten Free Flour: Use an all-purpose gluten free flour like this one. Almond flour or coconut flour will not work as a. 1:1 swap in this recipe.

Eggs: For ultimate fudgy blondie goodness, this recipe uses one egg and one egg yolk.

Butter: I love using grass-fed butter for this recipe.

Light Brown Sugar: Light brown sugar helps to sweeten the blondies while still ensuring they have that light color. If you like, you can use dark brown sugar or coconut sugar but it will change the color of the blondies.

Vanilla Extract: A must have for all baked goods.

Sprinkles: What gives these blondies their funfetti cake look is the sprinkles! I love using sprinkles that are made with natural colors instead of artificial dyes.

How to Make Funfetti Cake Batter Blondies

Step One: First, whisk together the melted butter, one egg and one egg yolk, light brown sugar, and the vanilla extract until smooth and well combined.

Step Two: Next, fold in the gluten free flour, baking soda, and salt until you have a well mixed batter.

Step Three: Now for the fun part! Fold in the sprinkles until they are evenly distributed throughout the batter.

Step Four: Next, transfer the batter to a 8×8 baking pan that has been lined with parchment paper. For extra color and fun, sprinkle an extra handful of rainbow sprinkles over the batter.

Step Five: Bake the blondies for 20-25 minutes until the blondies are golden and a toothpick inserted in the center comes out clean. Let the blondies cool a bit before slicing and enjoying!

  1. Loved these! My son enjoyed making them with me (so easy!) and using ALL of the sprinkles and my husband actually really liked something that was gluten free win/win!! Only comment is that the recipe part says 20-25 min vs the text at 25-30 and definitely not done at 20 min 🙂

  2. Absolutely loved these! They were simple to make, tasted delicious! I don’t think 16 is a good serving size, I definitely had a bigger serving than that. Will definitely be making these again!
