FLOURLESS FUDGY CHOCOLATE CHIP COOKIES. I want to make these again and again and again.

These chocolate chip cookies are a delicious grain and gluten-free twist on everyone’s favorite classic cookie. The base of these cookies is creamy almond or cashew butter instead of flour which makes them deliciously fudgy. They’re also sweetened with coconut sugar instead of regular refined white sugar. Coconut sugar is lower on the glycemic index and a more real food source of sugar.

At the end of the day, a cookie is still a cookie – so you can’t eat a dozen at a time, no matter how healthy they are. But, you can definitely feel better about eating one of these as a treat!

I love keeping the leftover cookies in the freezer for those nights when you need a late night treat!

Ingredients: 

  • 1 1/4 cup creamy almond butter or cashew butter

  • 3/4 cup coconut sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 3/4 cup mini semi-sweet chocolate chips

  • 1/4 tsp baking powder

Method: 

  1. Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.

  2. Place all of the ingredients, except the chocolate chips, in a mixing bowl and stir until well combined and a soft dough forms. Add in the chocolate chips and stir until they’re well combined.

  3. Using a cookie scoop or large spoon, drop dough by 2-tablespoonful balls onto the baking sheet. Bake for 10-12 minutes or until the cookies are set and bottoms have started to brown. Let cool and enjoy!

    Your recipes are all so good!! I mean all of them! I get so many compliments when I make one of your recipes. I made these cookies and the taste was good but they didn’t look like yours at all. They were light and pretty flat. I used almond butter and definitely added the baking powder. Do you know what I may have done incorrectly?
