  • Ground Pork: Most egg rolls are made with ground pork and it is my protein of choice in this recipe. I find that most people don’t cook with ground pork frequently so this is a great recipe to make that uses ground pork.
  • Shredded Coleslaw Mix: This recipe really could not be any easier, you don’t even have to chop the veggies!
  • Garlic & Ginger: The real key to this recipe is to use enough fresh garlic and ginger for maximum flavor. Fresh ginger and garlic always tastes the best but if you need to use pre-minced go ahead and do it!
  • Coconut Aminos: Coconut aminos are a common soy-free substitute for soy sauce in many recipes. They taste very similar to soy sauce but taste just slightly sweeter. You can find this on the Asian aisle of your local grocery, usually near the soy sauce.
  • Sesame Oil: Sesame oil is what gives this recipe that classic egg roll flavor. You should be able to find this ingredient in the Asian aisle of your grocery store.
  • Rice Vinegar: Rice vinegar is completely gluten free, Whole30 compatible, and gives this dish just the right amount of brightness.
  • Red Pepper Flakes: This is a totally optional ingredient, but if you don’t mind just a little heat, add some red pepper flakes. If you like a lot of heat, feel free to add even more.

Spicy Mayo Sauce You’ll Want to Put on EVERYTHING

This recipe is absolutely delicious all on its own but the spicy mayo drizzle seriously takes things to the next level. Making the spicy mayo sauce is so easy and I like to make a double batch to keep in the fridge and use it as a way to add even more flavor to your favorite stir fry!

Here’s what you need to make it:

  • Mayo – go with a high quality mayo you love!
  • Rice Vinegar – adds a mellow, sweet flavor to the sauce without being as acidic as other vinegars.
  • Sriracha – I really LOVE to use this sriracha.
  • Lime Juice – adds a little tang to help balance all of the flavors in the sauce.
  • Coconut Aminos – this adds a bit of umami flavor and a touch of sweetness.
  • Sesame Oil – so flavorful and delicious.

Once you have all of the ingredients, add them all to a small bowl and whisk together until well combined. Store the sauce in the fridge to keep it fresh.

How to Make Egg Roll in a Bowl with Coleslaw Mix

Step One: Heat a large skillet over medium high heat. Once the skillet is hot, add in a little oil to the skillet and then add the minced ginger and garlic. Sauté for a minute until everything is fragrant.

Step Two: Next, add the ground pork to the skillet and use your wooden spoon to break it up as it cooks. Cook the ground pork until it is brown, a little crispy, and most of the fat and liquid has evaporated from the skillet. There should not be a lot of extra liquid in the pan.

Step Three: While the pork is cooking whisk together the coconut aminos, sesame oil, rice vinegar, and red pepper flakes.

Step Four: Once the pork is thoroughly cooked, add in the coleslaw mix and green onion and then add the coconut amino mixture. Sauté everything until the veggies just begin to wilt and become tender. Then, remove the skillet from the heat.

Step Five: Make the spicy mayo sauce and then transfer the egg roll in a bowl mixture to a bowl for serving. Drizzle the spicy mayo over top before eating. Enjoy!

My Favorite Tips and Tricks for this Egg Roll in a Bowl Recipe


This may already be quick 20 minute recipe but with just a little bit of prep it can come together even faster! If you have a little time to do some prep in advance you can saver yourself even more time in the kitchen.

Here are a few of my favorite meal prep tips and tricks: 

  • Make the stir fry sauce in advance – go ahead and whisk together the coconut aminos, sesame oil, rice vinegar, and red pepper flakes and then store in an air tight container in the fridge until you are ready to use. 
  • Prep the spicy mayo – you can make the spicy mayo sauce three to four days in advance. Just be sure to store it in an air-tight container in the fridge. 
  • Use cubed frozen garlic and ginger – you can usually find these in the freezer section of your grocery store and they save so much time. The garlic and ginger are frozen from fresh which mean they have a ton of flavor. 
  • Prep your sides – if you’re serving this recipe over rice then you can make a batch of my cilantro lime coconut rice in advance and then store it in the fridge or freezer. If you’re adding extra vegetables as a side, you can chop them ahead of time as well!

Helpful Recipe Variations and Substitutions

  • Switch up the protein – you can easily swap the ground pork in this recipe for ground turkey, ground chicken, or even ground beef if you prefer. I’ve made this recipe with all three and each version tastes great!
  • Make it vegetarian – do you need to make a vegetarian version of this recipe? go for it! you can easily use your favorite vegetarian or vegan meat crumble substitute instead of ground pork. 
  • Use different veggies – you can swap the traditional coleslaw mix for kale slaw or broccoli slaw!
  • Add more heat – want a little more kick? add in more red pepper flakes to the dish or more sriracha to the spicy mayo sauce. 
  • Make a double batch – need an easy meal prep option? make a double batch of this recipe and reheat it for a quick lunch or dinner.

What to Serve with Egg Roll in a Bowl

One of the things I personally love about this recipe is how easy it is to customize and serve. Here are a few of my favorite ways to serve this recipe!

  • Spoon the egg roll in a bowl over cooked cauliflower rice with a generous drizzle of the spicy mayo for a veggie-forward meal.
  • Pair it with a side of white or brown jasmine rice and a few extra veggies like sautéed zucchini, roasted broccoli or roasted green beans. 
  • Add a side of gluten free rice noodles to switch things up a bit. It’s a delicious combo!

How to Store and Reheat

Store: This recipe will keep fresh in the fridge for 3-4 days. Just store any leftovers in an airtight container in the fridge. 

Reheat: You can easily reheat this dish in the microwave for 30 seconds to 1 minute at a time until heated through. If you prefer, you could also reheat the recipe in a skillet on the stovetop over medium heat until warmed through.

Description

This quick and easy Egg Roll in a Bowl has all of the flavor of egg rolls with half the work! This healthy, low carb recipe comes together in just 20 minutes and has a delicious spicy mayo sauce for you to drizzle on top. Keep things low carb and Whole30 compliant by serving it with cauliflower rice or try adding some white rice and roasted veggies on the side. This yummy recipe is sure to become a family favorite!


Ingredients

  • 1 teaspoon avocado or coconut oil
  • 1 pound ground pork
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 1/2 tbsp minced ginger
  • 4 cloves garlic, minced
  • 4 cups coleslaw mix (shredded green cabbage, purple cabbage, and carrots)
  • 1/4 cup green onion (plus more for garnish)
  • 1/4 cup coconut aminos
  • 1 1/2 tablespoons sesame oil
  • 1/2 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes

For the Spicy Mayo


Instructions

  1. Heat a large skillet over medium high heat. Once the skillet is hot, add the oil to the skillet and then add the minced ginger and garlic. Saute for a minute until fragrant.
  2. Add the ground pork to the skillet and use your wooden spoon to break it up as it cooks. Season with salt and pepper. Cook the ground pork until it is brown, a little crispy, and most of the fat and liquid has evaporated from the skillet. There should not be a lot of extra liquid in the pan.
  3. While the pork is cooking whisk together the coconut aminos, sesame oil, rice vinegar, and red pepper flakes.
  4. Once the pork is thoroughly cooked, add in the coleslaw mix and green onion and then add the coconut amino mixture. Saute the until the veggies just begin to wilt and become tender and then remove the skillet from the heat.
  5. To make the spicy mayo sauce, whisk together all of the spicy mayo ingredients in a small bowl until well combined. Transfer the egg roll in a bowl mixture to a bowl for serving and then drizzle the spicy mayo over top before eating. Enjoy!

    This was amazing!!!!!! Letting the pork crisp up was such a good flavor maker in the dish. For the spicy mayo, I did half Greek yogurt and half mayo to save on some calories and fat. I didn’t notice the difference at all. I will definitely be making this again.

I don’t cook with ground pork very often, and was tempted to sub ground turkey but wanted to try this recipe as it was meant to be. The pork crisped up really well. I did have to drain it, as the liquid didn’t quite evaporate. I used an entire bag of cabbage slaw to get more veggies in there and served it over brown rice. My husband raved about it and took all the leftovers with him to work the next day! Total keeper – thank you!!

  10. This recipe is SO GOOD! I did a mix of coleslaw mix & broccolini. For the sauce, it makes so much you will have left overs (which is a great thing because it is delish). I mixed it in a mason jar by shaking & then it was easy to save/store. Will be topping many other foods with it!

  11. WOW! A flavor fun, different, and easy dish. I used mild Italian (pork) sausage, and a bag of green and red cabbage and carrots slaw, and soy sauce, as that is what I had on hand. We had it over brown rice. I forgot to make the spicy mayo, so I’ll do that for the next time. And there will be a next time!

    Suggestion: consider having the items on the ingredients list in order of when they are used it the recipe. It makes it easier to toggle back and forth between the ingredient amounts and the steps while cooking. Thanks!

  12. So fresh and perfect for a quick summer meal, especially if you buy a bag of coleslaw mix. I didnt have pork, which I was bummed about, but it was just as good with ground turkey. Besides the. meat substitution, I followed recipe to a T and it was perfect! I especially loved the spicy mayo, and I want to add it to EVERYTHING! I had over some rice.
